I get you Anton, I personally love cooking but I HATE having dirty and/or sticky hands. And props to Sofia for being able to tolerate you in the kitchen haha
1- to avoid oil jumping around, you can hover the lid above the pan in a tilted manner, like using it as a shield, but be sure to just hover above the pan because if you cover the pan or get to close then there will be steam build up inside and that will make the oil a lot more jumpy. 2- to avoid touching the chicken, you can pour the premade sauce into a zip bag for food, put the chicken in there as well and seal it, then shake and beat the package to complete the marinade. 3- to avoid having chili peppercorns in the dish, you can use chili peppercorn oil instead, same numbness and flavor without peppercorn getting in your mouth.
Inb4 you cant see nothing from the lid? And if the lid is glass water will condensate on it and you wont see anything anyway? Im not into cooking so Im actually curious would this be a problem
@@stefanjasovic2311 key word is tilted, that way you will know where the condensate water be located because gravity, and easy to make sure the droplets drop outside of the pan. if you want to see what's going on in the pan, just move your neck or move the lid out of sight for a sec but usually there's no need to see unless you still stirring. i'm no chef and i mainly cook for me, sometimes for kid and wife, so i wing it a lot during cooking, i just use whatever is close and whichever be convenient. just lotta common sense and try to have fun. nothing is worse than following steps techniques recipes etc doing it all rigidly, it will instantly become a chore.
I used to eat gongbaojiding all the time when I lived in Mianyang near Chengdu. I still think about the food in the tiny restaurants there. I think your recipe is so much closer to it than anything I have found on the internet. It looks just right😂 LETS EAAAAAAAT

Some useful 宫爆鸡丁 tips: 1. When marinating the chicken, add everything else but the starch, leave it for 20 minutes and then add the starch literally like 10-20 seconds before you put it in the pan. This makes it softer and less chewy 2. Cut the chicken pieces small enough, otherwise the sauce won't marinate optionally. You should be looking for really small cubes. This will also help the chicken become less chewy when cooked. 3. As for adding water to the sauce, I like to add hot water from a freshly boiled kettle - this will reduce the amount of bubbles you get in the sauce, and it breaks down the starch better so you don't end up with any loose granules. Good job magladoni! ❤
This video was honestly a breath of fresh air. I laughed so hard at the jokes sprinkled in the video which is kind of rare considering I don't laugh at jokes so much. I @RealRanton struggle with the utensil you used to turn the chicken while it was frying. A tip I can give when you are shallow frying small ingredients is to use a pair of tongs. It is much easier for beginners

Agreed. Just wear gloves. Wash/sanitize with alcohol in between touching things like raw chicken/beef/eggs and you’re golden.
