Soil to Soul Restaurant: Scalottas Terroir

  • The restaurant Scalottas Terroir is located in the holiday destination of Lenzerheide and is part of the Schweizerhof Lenzerheide hotel. Hansjörg Ladurner and his team serve dishes made from products from their producers in small portions. Guests can create their own menu according to their preferences. Their menu consists of regional products and is adapted to the available ingredients.
    For the past five years, Hansjörg has been cultivating his own field in Lain, at an altitude of around 1300 meters above sea level. In collaboration with three organic farmers (Marcel Heinrich, Andrea Parpan, and Bruno Hassler), they plant potatoes, corn, rye, barley, poppy seeds, bread clover, and other crops using traditional methods.
    The idea behind the "BergAcker" (mountain field) is not to be self-sufficient, but to show farmers that there are alternatives to heavily subsidized dairy farming when it comes to food production.
    In a trusted collaboration with the Zurich food blogger Sarah Blattner (@zueriplausch), Soil to Soul introduces nationally recognized restaurants that have excelled in terms of soil-conscious production and preparation.
