  • Learn how to cook dried shiitake mushrooms which you can use as a filling for sushi rolls.
    In this video, I will show you a classic Japanese recipe how to prepare dried shiitake mushrooms into sweet juicy soy flavored mushrooms that can be used as a filling in sushi rolls.
    For this recipe you will need:
    10 dried shiitake mushrooms (Donko) geni.us/shiitake
    1L water
    120ml sake wine
    120ml mirin geni.us/Rl1Ba
    30g brown sugar
    40g or ml soy sauce geni.us/soysauc...

      Some Miso Soup for sure; but I think it would be really interesting to use them minced in a burger, omelette or some simple fried rice.

    Glad I've finally found someone who knows how to make these so I can make them myself now!
    A perfect roll for them (It's amazing) is inside with asparagus & cream cheese, topped with Tuna & salmon. All the flavors play off each other for a sweet roll that is called a candy roll.

    I'm violently allergic to any kind of seafood, and all mushrooms, but I still love your videos! (Especially the artistic designs!) I can see how those seasoned shiitakes would add tremendous umami to lots of dishes.

      I love the ones where there's a picture inside the roll, or a whale leaping up from the plate. And I've made the ginger sauce, and used a meat filling in the egg "moneybags". You're very creative! As I said in Hiro's channel, I'd like to see the two of you together showing off your best ideas :-)

      I think that to a special occasion I will try to do so, not for everyday life, it's a little expensive. But I already done many others receptes from your channel, and I can use this recepte like the inspiration for prepare my own dishes, may be champinons or something else. I've been following you for a long time and always like your channel very much. I learned to make sushi by your lessons. Thank you, chef

    I find it easier when trying to hydrate shiitakes, if you have one, use a lid that's just a little too small for the pot or bowl to hold them under the liquid rather than a paper towel

      Other pages say you can freeze them for up to 3 months and it doesn't affect taste or texture

      no, this recipe is just for dried mushrooms, yes the flavor would be less intense also the dried mushrooms soak up the ingredients better so the flavors really penetrate.

      yeah its nice to snap your fingers and have thing magically wash them selves 😂
      but yeah its just applying a lot of pressure from the 3rd finger on to the thumb until it slips and makes that noise.

      You can still do the same with fresh shiitake mushrooms, but the absorption rate is much less so the sauce doesn’t get absorbed as much into the mushroom as it would with a dry one.
      Also, the taste of fresh mushrooms is much different than the taste of a dried mushroom.
      But both still make amazing results.

      Thank you for that insight, I think its a combination of things, taking big breaks also I knew cooked mushrooms was not going to bring in a lot of views when i was making it, but it is a technique people who make sushi will appreciate so I made the video anyway.
      You also didnt mention the video before that one that has hundreds of thousands of views...

      its because it was a small amount measuring beakers, don't really go that low so it's basically guesswork at small amounts.
      but 40g of soy sauce is the same as 40ml of soy sauce or 4 tablespoons.
