Hello Chef Eddy, thank you very much for your vegan sushi series. I can learn to make some for my vegetarian friends. May I know which type of soy sauce do you use? Is it Japanese or Chinese soy sauce? We use Chinese soy sauce at home and the taste is quite salty.
I'm not sure how big batches your have, only can say that could take about 5-10 minutes, but you will need keep eyes on it when the sauce reduce to 1/3 means ready.

I normally use japanese soy , if only Chinese soy you may try add some sugar to balance out of salty taste.
How long do the mushrooms need to boil? I want to do 2 batches of mushrooms in the sauce
