    Hello Chef Eddy, thank you very much for your vegan sushi series. I can learn to make some for my vegetarian friends.
    May I know which type of soy sauce do you use? Is it Japanese or Chinese soy sauce? We use Chinese soy sauce at home and the taste is quite salty.

      I normally use japanese soy , if only Chinese soy you may try add some sugar to balance out of salty taste.

    How long do the mushrooms need to boil? I want to do 2 batches of mushrooms in the sauce

      I'm not sure how big batches your have, only can say that could take about 5-10 minutes, but you will need keep eyes on it when the sauce reduce to 1/3 means ready.
