It's because they constantly use the term "Atheist" incorrectly in churches to mean, "Someone that doesn't believe in God" for every generation and they refuse to correct themselves. So to them, when they come out of the church and meet REAL Atheists, it does feel like we're trying to pull a fast one on them. Because none of their bottled responses for their caricature of Atheism seem to work.
