Joe, there used to be a restaurant called Red Savoy’s in the twin cities I think? They made a flat bread style pizza which sounds like what you want to make? Not sure what your mom put on her flat bread but this is how we make it. I own and operate several restaurants in the Austin area serving a flat bread style pizza similar to what you’re interested in making. Sure hope you try this version, I think you’ll be happy...and of course no offense to your mom. Recipes follows: - 4 cups AP flour -1/2 tsp. Instant yeast -1 tsp. sugar - 1TBLSP salt - 1 1/3 cups water - 1/4 oil (your choice) *Add all dry ingredients to bowl. Mix dry ingredients just to combine. *No need to bloom yeast before using. *Next add water and oil to bowl with dry ingredients, mix until it forms a shaggy dough. *Cover bowl and let dough rest 45 mins. *After resting, take mixture out of bowl and mix/knead until ball is formed. Mixture will feel a bit dry but that’s ok. * Place dough into an oiled bowl cover and let rest at least 3 hrs. The best option is to make dough the day/night before using. We make it before closing and let it do it’s bulk rise in cooler overnight. This is the best way to develop flavor and texture of your flat bread dough. * if you do the 3 hr. version no need to refrigerate. *After the bulk rise divide dough into 2 equal parts, let dough balls rest covered on your counter for and additional 30 minutes. At this time preheat your oven to 400F and grease your bake pan. If you want you can dust the greased pan with cornmeal for added texture but this optional and not required. * Take one the dough balls and either by hand or rolling pin work into rectangular shape to fit pan. If you want to press the dough in by hand this is ok too, you may have to let dough rest for 15-20 min. increments to relax the dough to fit pan. -Bake at 400 until dough pulls away from sides of pan 9-12 mins. - take butter or olive oil brush top of flat bread, then sprinkle garlic powder, salt and dried oregano on top of flat bread...amount of each is up to you. Cut with pizza wheel or kitchen sheers. # Couple of things, using less yeast, less water and AP flour help to keep the dough from rising too much. Less rise means a crispier crust. The other tip is using a TBLSP of salt, not only will it make the end product taste better, salt retards the rising action of yeast. Last point, making the dough the night before provides for a “slow rise” which all of the restaurants use, a technique which ensures great flavor and texture. Sorry for the long post, I just wanted to share this recipe with your and your subscribers. It’s not difficult to make as long as you give yourself enough time. It doesn't matter how good you get at making it, it will never be as good as your mom could make. There's just something about mother's recipes that only turn out right when they make them. Never have tried making flatbread, but I bake no knead breads all the time! One of my favorite things to do!
My mother used to make a flat bread very similar to how you did this but she would take a fork and prick the whole thing before baking. It was flatter than yours so maybe the pricking with fork helped? Slathered with butter right out of the oven...served with soup (our favorite was Finnish Salmon soup)...doesn't get much better than that!

I have four aunts that never learned to make my grandma's bread. I would visit Grandma for 3 weeks every summer and I would stand by her side and watch her cook everything. I would write down exactly what she did. And she did not measure anyting. 1 Spring I wanted to go to Church Girls Camp, and I wanted to make my own money to do this. So I started making bread and I made a lot of bread. Every batch got better and better and better. My bread came out exactly like my grandma's. The texture was exactly like hers, and boy was it yummy. My aunt's had their own recipes that they made their entire lives. It was good bread but not like Grandma's. My entire family Love's it when I make grandma's bread. I am teaching my grandchildren how to do it so the recipe does not die.

I think you actually need a larger cookie sheet so that you can spread it out more witch will make it so much thinner. Not sure if they make pans larger then the one you used. Just my thought on what may help make it thinner for you. looks good though and the crunchy sound when you where eating it makes me want to try this recipe.
My grandmomma made a stew called Slum. It was a marine recipe that grandaddy loved and we ate it over rice. I loved to eat it at grandmomma's. My momma made it often but it was nothing even close to grandmomma's. Taste, texture or smell wasn't the same. LOL HUGS~Donna
This recipe is almost identical to the Betty Crocker recipe in a vintage cookbook for pizza dough. I put it into a pan like yours for the pizza and use a handmade roller to help roll out the dough. I don't let it rise as much as you have.
Looks great Joe! But I dock mine...poke holes with a fork. It helps it stay flat and not puff up so much. I do it for pizza crusts. Hope Mom is well and answers you back!
Looked good to me. I may give it a shot when i can find yeast. I will try it without that last few minutes of rise and maybe even a rolling pin to get it thin. With the arthritis the roller is easier anyhow

It sounded crunchy when you were eating, after putting back in the oven! I love crunchy foods!...Our weather has been crazy too. I've had to cut our GREEN grass 2 times now. It's warm but has a cold breeze to it! I live 2 blocks from the river and fishermen would take their small boats and go fishing every day! (They come by my house!) Some days that would be the only traffic. My neighbor across the street had gotten the virus and so did my oldest grandsons' teacher! They are both doing great now! (My grandson will be 12 tomorrow 4-18-20) I have enjoyed your videos, as usual! Can't wait to see the tent videos! Be safe! 😁
That's almost my exact pizza dough recipe. I do mine the night before and let it slow rise in the refrigerator. The next day you won't have to fuss with it. It will stretch across the pan in one try.

Traditional flat bread is just flour and water no yeast just mix flour and water til forms a ball let rest cut dough in half or quarters roll out thin then in a hot dry cast iron skillet fry for about 3- 4 minutes per side.
Glad to see you not giving up. Who freaking knew making bread was so dang finicky? When did scales for measuring replace cups and spoons? And why do we need special “bread flour” replace AP? It’s so frustrating! PS, I don’t remember my grandma checking the temperature of the water for yeast so wth?
JOE, if you really want to learn how to make your Moms flat bread, go to her house so you two can make a couple of loafs of bread. Just be sure you take a video of you two making the bread. That way many years from now, you will have the vido to remind you of that day together. 😊

Need a bigger cookie sheet and also use the end of a wooden spoon to indent holes in the bread dough, just don't poke the holes all the way through the dough. Before u put it in the oven take a basting brush and brush dough with olive oil. Can sprinkle with rosemary or whatever seasoning you like.

You might like to try Phyliss Stokes on You Tube. She was really good with lot's of recipes. I've seen her make it. She would disk hers out and they looked good. I haven't tried it yet but, plan too.
I can't make my granny's biscuits ( rest her soul) ,even though I watched her do it for years ,every weekend and her telling me face to face! I only get close
I think this is like a focaccia bread maybe? Looks yum. If you put more olive oil in it, it's focaccia. And it doesnt get kneaded hardly at all. Maybe you are developing too much gluten?

Joe is it flatbread like Focaccia or is it like Naan bread that India eats? Naan is just equal amounts of AP flour to greek yoghurt and it is delicious. My Great Grandmother made this for me all of the time because I loved it. We called it "Grandma Bread"!

Joe, typically you'll see flatbread served alongside your meal when you go out to a Turkish restaurant - I absolutely love it.

Nothing that you make will ever taste the same as when your Mom makes it, it's a fact of life.
Try heating oven to 450 and bake 15 to 20 minutes. Enjoy all your channels.

Next time I would try the regular dry yeast mom used rather than the instant yeast. Then throw in a kiss for mom!
