Thank you so much for this heartfelt tutorial. I went down south with my mother to visit her family from New York City where we lived, for the first time when I was nine. My Great Aunt Myrtle wanted to teach me how to make watermelon rind pickle, but I refused because I was so mad that my much younger brother had been allowed to go out on a boat fishing, and I had to stay home and cook. Of course now I dearly wish I had learned from her then. But I can learn from you now. Thank you so much for this redeeming experience. By the way, can we go fishing too?

So glad to find this! I have only been canning for a short while and am so happy to find watermelon rind pickles here. I have wanted to eat them again for over 30 years. I will be buying a watermelon--out of season--so I can make some this next week. I also watched your meatloaf recipe and you said you were rebel canning. Interesting and they look lovely... it sort of reminds me, perhaps, of a chutney? (never having tasted most Southern treats like this, I am just guessing.) I also like hearing the insects down by you... a very different kind of sound from cicadas, or whatever they are. 🦗 Glad you got this new adventure of canning in a tropical storm safely off of your experience list! 😅
Kinda is like a chutney, but so much better. Have had some really nasty chutney before. 😂 The bugs singing in the background are cicadas, a few crickets and occasionally a frog hops in to join the chorus. 😉 Thankful to have it included on my list now. Unfortunately we did not get near the amount of rain that we have been desperately needing. A little bit of rain, a little bit of wind here and there but she left us pretty much high and dry. Have been working in the garden while it's cooler and about an inch into the ground it's bone dry. So once the winds calm down I'm going to have to resume watering the garden again. Prayers are still going out to those who have been devastated by Ida. There is so much horrible destruction south of us and thankful for not having that head up this way. I froze a watermelon rind, from a watermelon we got. Waiting for your video. But.. now im worried, that freezing it may have made it soft and un usable. But thats ok, ill get another melon of theres still some at the store
Oh shoot I didn't realize you could do that with one that's not ripe! I am terrible at telling when a watermelon is ready. I grow heirloom moon and stars and it has the taste that watermelon used to taste like. I picked one a couple days ago that was still white on the inside and it crushed me. It ended up in the compost pile. I have made this before and I am thrilled to know this, thank you!
Your welcome and glad to help out. Just have to make sure that you cut off any soft spots in the rind. Best way to tell that a watermelon is ripe is to look at the little tendril that grows off of it and if it is dried up and you thump the watermelon and it sounds hollow it should be ripe. Also before harvesting a watermelon if you've had rain wait for about 4-7 days of dry weather and by then the moisture that the watermelon has soaked up will have turned to sugars inside. Also you can use the watermelons that have split due to rain as long as you catch them early and they don't start to spoil. Take care and have a blessed day. ❤️🍀
@@OldWaysGardeningandPrepping The tendril was dried and brown, the bottom was yellow, it sounded hollow, and the blossom end piece was brown. I didn't know about waiting 4 to 7 days after a rain. That is something we have had a lot of this growing season, rain. I don't know if that has something to do with it or not. My husband was swearing that another one was ready and if I waited a couple more days it would be bad. I explained to him that the first one sounded just like this one, and also had the yellow bottom. I went out and plugged it. Still white as white can be. I put the plug back in and put duct tape over it in hopes it will be ok. I don't know. This has sure been a strange growing season in my area and I have noticed gradual changes in the last few years but this time around they were pretty big.
Yes study up on the Grand Solar Minimum. It is going to be very important to start doing a gardening journal. Sadly each year is going to get harder to grow a garden. Yes too much rain will really throw them off. Definitely need to go on and pick that one you plugged. Still desperately needing rain here due to not getting hardly any rain from the hurricane. @@OldWaysGardeningandPrepping My husband has talked about the grand solar minimum. I really need to research it. I started journaling the wildflowers growing here this year and the ginseng I planted 2 years ago but I didn't think to do it for my garden. I do write dates I put seeds in starter trays and when they get planted in the garden but that is a very good idea to write down the process and how they do. The tomatoes didn't do good at all because of all the rain. Both early and late blight hit them. Thank you for the heads up on everything and you have a blessed evening too.

Forgot to say yes a over abundance of rain will do that and also cause them to be mealy inside as well. 🍀
