How to level-up this drink!
This recipe is just fantastic as it is because of the balance between flavor and simplicity to make.
But like anything, sometimes you really want to strive to make something really special even if it means a bit extra work. So here's how you can level-up this pina colada recipe...
Simple syrup: Instead of using plain white sugar to make your simple syrup, use a darker sugar instead, like Demerara sugar or date palm sugar, etc. It doesn't make a huge change to your cocktail, but it will add another flavor dimension that adds a subtle complexity that makes your cocktail recipe stand out from the others.
Add lime zest: zest half of a lime and add it to your shaker, then strain the cocktail as you pour it into your glass. That lime zest adds a 2nd level of limey complexity to your drink. But go easy with the lime zest in this recipe because you still want a balance of flavors, not a lime-bomb like a margarita.
Use fresh pineapple juice instead of canned: canned pineapple juice works great in this recipe, but try cutting a fresh pineapple into cubes and blitzing it in your blender, then strain to get the fresh juice. I mean... yeah fresh fruit juice of any kind is going to level-up your cocktail game.
Taste-test your rums: There are myriad rums to choose from, so you need to find a rum that is somewhat balanced in flavor and mild with the molasses notes. Dark rums are inappropriate in this pina colada recipe, but you also don't want a boring white rum that only adds alcohol with no flavor. So do a taste-test of several rums to narrow down what works best for you palate!
