This recipe (minus the cheese and bacon topping) has been a part of our Thanksgiving dinner for years. I passed the recipe on to my son and now that is the dish that he brings every year. It is delicious!! This year, after dinner, I put out some to go containers so people could help themselves to the leftovers. My 6 yr. old grandson grabbed a container and started loading it up with just the Corn Pudding and said "This is just for me!". When he got home he told his mom (who was sick and couldn't come to Thanksgiving Dinner) that she could have ONE spoonful, but the rest was his! :)
I have a similar recipe that calls for melting the butter in the oven in the pan, then dumping the mixed ingredients on top. The mixture starts to cook immediately, and you get that crispy browned butter edges!
I have been making this recipe for probably 30+ years. I haven't put bacon or cheese in it, but I will be adding this to mine this year. We make it for Thanksgiving and Christmas dinner. It's my son's favorite side.

Hi Gina, do you think I could take the bacon out and fold in some finely chopped green chiles? I live in Europe but I'm from Southern California, where there is a restaurant that makes sweet corn, cheddar and green chile tamales for the holidays. (I can get Jiffy shipped from an American food store in Belgium!)
She says just before that “I used to think…” and ‘I didn’t think’ which show past tense Ms. Susan so… come down! Smh everything is relative and people are allowed to use better quality products from time to time. That does not make them elitist
Lol I'm going to tell you the way I took that comment. When I heard Ruth say "I didn't think people really used these" I thought I understood what she was saying. My grandparents were very poor but my grandmother would have never used a box mix just simply because she could make is better from scratch. I did not take it as an elitist remark. I hope this comment helps and gives some understanding on good old fashion cornbread making.😊
Nah, I'm Ruth's age, and I think she means that her family made cornbread from scratch. Some of my family members had the same reaction to cranberry sauce in a can back in the day, whereas I didn't even know cranberries were from an actual plant when I was a kid. She uses a lot of "shortcut" products in her recipes. She's no snob.

This is great in the summer too…we serve ours with ribs on the grill. Tastes great room temp too…if you don’t add the bacon

Any cornbread mix should work, may need to add 1-2 Tbsp sugar since jiffy is sweeter than most cornbread mixes😊

How much cornbread would you need to make because I do not like Jiffy. Would love to make this.
If you prefer not to use Jiffy, you can substitute with about 1 1/2 cups of homemade cornbread mix (or the equivalent of an 8.5 oz box of Jiffy)
