    When boiling shrimp ebi, you must keep the lid off the pan in order to determine the perfect time of when the ebi is cooked. After boiling the ebi for about 30 seconds the ebi will come up to the top and then sink back down, then after about 15 more seconds it was then come to the top one more time. The second time it comes back up is when it is at it's perfect texture, then ice bath.

    Just for curiosity, why didn't you kill the shrimps at first, then ice bath them, then skewered them and so on?

      Icing shrimp/crabs/lobster etc, shocks them and sorta puts them into sleep. It doesn't kill it and its easier to work with. I wanted to preserve the quality of the meat. You'll get a better result cooking crustaceans this way; especially with crabs.

      Putting fish in an ice bath live also draws the blood to the organs, it helps the meat stay firm and keep good color.

      Let's see.... option 1- Kill the little guys first before cooking them because it's humane and it will still taste damn good or..... Option 2- Let's go ahead and put them into a bullshit "sleep" and torture them alive because the meat will taste better! I am a meat eater but I also understand suffering extends to all species. It is sickening people still choose option #2.

      you know that even if you buy them already dead, someone had to kill the shrimps at some point and maybe in more cruel manner. Because you cannot handle killing it yourself doesn't make it more humane, I think it is even worse. Killing the naimal you are going to eat teaches you to respect their lives and to not waste food needlessly, it is in my opinion the best way of consuming animal food. so get off your high horses you are not better than the rest of us, at least Sushi everyday respects his ingredients.

      It´s only a food. If they were not be skewed before boiling, they were be rolled so you cannot use them, in this straight position you can easily put them on a piece of rice and make an awesome dish. If you wanna cook tasty food, you cannot be scared of killing animals because that is the way you get really fresh ingredients.

      Jakub Krystek You also kill a lobster before you cook it. You chop through its head. I think skewing the shrimps without killing them first is illegal. Boiling a lobster without killing it first is.

      actually did it twice in the meantime - once with fresh (not frozen) and live like you did in this video - both results very good as even the fresh ones were just put on ice ( for transport ) in a box ( but as said not frozen before or in the meantime ) so it was kinda "similar" effect ( like putting them in ice cold water ) ... perfect taste ( not to be compared with tasteless "done shrimps in a can" ) ...

      MGA Nice! Nothing like fresh shrimp. Wish more people have access to fresh ones. most in the US are frozen.

      Asia is good for that - i loved it there ( i am in EU ) - you can buy live fish/crabs/shrimps on the street directly from a tank as you mentioned in your comment :-)

      You can catch them in summer time in the flats of Desoto Park or even get some from your bait store. I've eaten plenty of leftover bait shrimp. MD oriental market in Pinellas sells farm raised shrimps.

    Cow, goat, rabbit, shrimp. They are all food but I'll tell you it's far better to to at least pop it in the head before you process any animal, at least give it that much respect. I mean shit, it died so you can eat, can a shrimp at least die easy. Stab it in the head before you go impale it mouth to ass, won't be out of your way that much.

    What type of shrimp is that and where can you get live shrimp in Canada it's almost impossible to find shrimp live except for spot prawns when in season

      Its White shrimp, farmed from Florida. I wish we can get some live Spots here, they are so good raw. You're lucky! Try using other fresh shrimp, it'll still be great.

      Sushi Everyday I'm not a fisherman and I don't know how to fish spot prawns because I live in Quebec and spot prawns are in british colombia but I think they use traps like how they fish for lobster

    Reading the comments on the treatment of the shrimp is redundant. In the wild there going to be eviscerated by predators, half ate alive, so please.... bring more boiled morsels

    This is nasty, you must remove the vein before cooking it, not just rinse it with water. It's the shrimp's poop 🤮
