I think one of the roles of the sensei is to bring things within our reach. After this clear demonstration I guess the great majority of us will be able to do those things. Nice instructional video. I'm learning this Kata now as part of my sandan requirements. Probably testing next year. What style is this? Kata is very similar almost exactly the same as Unsu in my style.
I think breathing out, the same as when you talk or count, should be connected to your technique. Counting and doing the technique at the same time produces greater fluidity in your movement. Separating them prevents you from connecting breath to technique.

Actually, in this case I'm also doing the kata, so I'm counting and doing at the same time, syncing both. I find counting then doing is cumbersome. This is also how it was done on the instructor's course in Japan by people like Asai, Kagawa, Yamaguchi etc. However, it's also a very minor point, so we must all find our own way.
