as someone who doesn't speak Spanish I looked it up and it seems to be a colloquial expression that basically means "an attractive female".

Mijita comes from i think 'mujer', which means woman. -ita is a way to make something smaller, i understand it as a way to call something cute as well, 'rica' is the female form of rico, which means rich, but it can also mean delicious or beautiful, so I would translate mijita rica as Beautiful Woman, but with an extra touch of cute in the meaning.
