      @@ChefEpic Anything technique-related is great. I'm not sure who runs this channel, so I'm sorry if I'm speaking about you in the 3rd person, but everything Davin Waite does is fucking awesome. Keep looking for chefs that do unusual stuff, like basically all the videos from the beginning of the channel. The reason I subscribed is because you don't film things I'm looking for, you film things I didn't even imagine existed. I know it's a challenge to always find something new, but I absolutely love the stuff you do find. Thanks for the great work.

    We used to get copper river salmon once a year at the restaurant. I've never got to eat it but it must be the business because it would sell out that night .

      yeah it's got a really short season, but there are seasons for coho and chinook i believe. it's super fatty.
