Your whisk would have made it lighter and fluffy. Kinda like divinity. Seems almost no fail even with not exactly by the recipe.

I can see why evaporated milk and sweetened condensed milk really shorten the cooking times on traditional candy. There's just so very much evaporating! That second attempt looked like amazing marshmallow ice-cream sundae topping, by the way. Even your fails look yummy; the sign of a great cook. :)

Put a little malt powder in your white fudge and invent a new fudge.... Vanilla Malt Shoppe Fudge. You could get really creative and put a marashino cherry on top with a little thin drizzle of chocolate for Fudge Sundae. LOL

I'd put that Blonde Fudge on a cooling rack with wax paper, freezer paper or foil. Spray it then lay them flat and freeze it that way.

When you had to make the fudge three times, is that because it wouldn't harden? My mother has always made fudge that required the soft ball/candy temp and that type of process always requires a wooden spoon. There's some kind of chemical reaction that happens if you use a metal spoon to stir it. I don't know how or why, but that was the rule. Never stir it with a metal spoon... use a wood spoon only.

    • @yvonnepalmquist8676

I looked it up. It has something to do with the way it transfers the heat and crystallizes the sugar.

    • @lindabarling7719

I, too, grew up this way. Every time, we made fudge, always a wooden spoon. 😂

I have made all the fudge for our family for 50 plus years now - high and low altitude- and have never used a wooden spoon only metal. It always turns out fine. Go figure.

Looks delicious! By the way, Ghirardelli is pronounced "Gear a delli" (if you want to pronounce it more Italian, emphasize the D). I used to live near San Francisco where the plant is, my ex used to make fun of me for pronouncing it like you did.😊

😅 maybe you'd like the PGA (Pure grain alcohol) meetings better? Would definitely be more fun for a little while but you'd want to leave before the streaking started. 😅 Just trying to add a bit of humor

There is no listing for Maple Walnut Fudge or Maple Fudge or Walnut Fudge of any kind. The only recipe that gives you a measurement for how many nuts to add is the Rocky Road one. So I have no idea how much Maple Flavoring to add or how many walnuts I should use. In the video you are scooping the walnuts out of the bag, but how many is that? Not trying to be a pain! I just don't know if it's not written down. I am not a fly by the seat of my pants cook! LOL I know my Grandma was and everything was wonderful, but that skill was not transferred to me! LOL 🤔🤷‍♀
