Based on watching every season of Hell's Kitchen, I suspect there are a LOT of actual chefs who would have trouble with identifying these cuts, much less being able to cook them. I don't know that they would make guesses as silly as some of these, though.
I'm surprised most of the people they find for these videos have even managed to stay alive. I've never spent a day doing professional food work and I knew all of these. Then again I am from Texas...
In Turkey we don't waste any part of the cow/sheep, we even eat the meaty parts of the sheeps skull (tongue, cheekmeat, brain etc.), we make soup out of the tripe and skullmeat. Lovin it when the cow tastes me.
I think all countries except US and Canada use all the parts of the animal. Though they might be turned into hotdogs so you can't tell what part you're eating. I'm with good with either.
Naa Jamaican Sparkling Xylvr the jerry curl lady is also Jamaican who seemed to know her answers that they showed. Every Jamaican should get tongue and tripe. Heart may be a little hard but you can go by process of elimination to get it.

Yeah!! I was like these Americans be eating at a Mexican taco stand and they be loving it and yet they get grossed out when they see the actual cut. I found it interesting that they didn't include the head. Tacos de cabeza is bomb.
These people are disgusted by beef and half of them don't know how to seperate an egg yolk from the white In other words its like giving a kid with down syndrome a lighter and letting them do whatever
Usually I'm pretty nonplussed when I am able to do the things in these videos. But when I got a clear shot of the meats I legit yelled every cut at the screen and was super satisfied. I don't think it's impressive or anything, but I got so excited because I didn't expect to know everything in front of me. I'm sure there's some beef cuts I couldn't identify, and that's what I thought would happen.
I actually served cow's tongue as one of the courses of our Christmas dinner last year. Properly braised and fried off in some herby butter it is super tasty and can serve a whole crowd for little to no money (our butcher actually gave it to us for free, since he had soo many left-over tongues). Win!
You know that white spongy looking thing? I recognize that part, but not because of any culinary training. I learned what that is in a college Microbiology class during a lesson on symbiotic bacteria. That thing is the rumen, which in cows is full of symbiotic methane-producing bacteria that help it digest grass. I think it's called "tripe" when used as a food.
They were ALL so grossed out by the tongue, but honestly, don’t knock it until you try it. It’s pretty much a delicacy where I live. It’s amazing. Give it a go if you get the chance, it will probably surprise you
For the first time, I can finally say I would fail in this cuz I'm vegetarian. 😂😂😂 Edit: bruh. I surprisingly knew them all except for the Butcher's Steak. Growing up Latino still has left me with some knowledge man 😂😂😂
Knew them all. Eaten them all except the tripe. I've had the opportunity but passed. "No brains, no tripe." It's a firm policy of mine. Cooked and served a lot of tongue sandwiches working at a deli in Boca Raton.
And if you want to know, they are ruminants, these four stomachs are used to pre-digest the grass with bacterias and mushrooms, and they regulary regurgite some of the grass to chew it again :D
In South Africa, we cooked our tripe into a stew, and serve it with mealie meal. We called it Mogodu.👌 All the other pieces are delicious too especially the tongue.
