Homemade Probiotic Yogurt from Raw Milk - Benefits - Tips

  • Most Indian families do not finish the meal without eating yogurt. Instead of desert they eat yogurt. That is a built in cultural practice that promotes digestive health which is foundation of overall well-being.

    Ingredients
    1/4 gallon of Milk
    2 tsp of yogurt (unflavored) from previous batch or you may use the store bought yogurt starter. If you make yogurt regularly you will always have yogurt starter.
    1-2 probiotic capsules
    Preparation
    Boil the milk and let it cool down to a luke warm temperature. A little more than luke warm will be ok.
    Get your starter and probiotic capsules ready.
    Procedure
    Open the probiotic capsule and put the powder in the starter yogurt.
    Mix it thoroughly.
    Now take 2 tsp of this yogurt mixture and add it to the luke warm milk.
    Do not put it on the cream. Move the cream to the side and add the starter.
    Mix it well.
    If you absolutely have no starter available, put some tamarind in the milk and leave it to set. This may take little longer than normal time.
    If you live in a hot climate you have no problem to make yogurt. Just keep it on the kitchen counter for 4-6 hrs. without disturbing the vessel.
    If you live in a cold climate especially in the winter, please follow one of the methods below. Please share with me which method works for you.
    Setting the yogurt
    There are different methods you can use to set the yogurt. I will share some methods. You can use which ever one is convenient for you. It takes 4 to 6 hrs. to set the yogurt.
    1. Wrap your vessel with a thick towel or sheet and keep it on one corner of the kitchen counter.
    2. If you have a pilot light on in your oven, just put your vessel in the oven. The pilot light temperature will be good enough to set the yogurt. Do not turn on the oven temperature.
    3. If you do not have pilot light in your oven, place your vessel in the oven and turn on the oven light. Do not turn on the oven temperature.
    4. If you do not have both pilot light and oven light, then turn on the oven to its lowest temperature and place the vessel in it. Take it out when the yogurt is set.
    5. Place the vessel in an igloo or ice box (without ice in it) to keep it warm.
    6. Place it in a pressure cooker with some warm water in it.
    Helpful Tips
    You can get the yogurt starter from an indian friend, neighbour or from an Indian restaurant.
    Once you make the yogurt that becomes your starter for the next batch of yogurt.
    If you do not have any kind of starter, put a little tamarind in the luke warm milk and leave it to set. It takes little longer time but it works.
    Do not disturb the vessel while it is being done.
    If you use too much starter your yogurt will be too sour.
    After the yogurt is set, keep the vessel in the refrigerator to get firm yogurt.
    If you don't get yogurt in 6-8 hours do not rush and heat up the milk. Put the vessel in warm water for 10 minutes. Your yogurt will be ready in 10 minutes.
    Health Information
    Eating a cup of homemade probiotic yogurt on empty stomach gives a good supply of probiotics.
    Probiotic yogurt colonizes intestines with beneficial bacteria thus suppressing yeast and candida. It also nourishes intestinal lining.It will help digestion, metabolism and detoxification. You will see improved energy levels.
    Do not add fruit or sugar to your yogurt when you are on candida diet.
    The store bought yogurt may contain preservatives, corn starch and other thickeners to make it firm.

    Thank you very much for the video. How much milk is used to make a batch of yogurt? And, what type of mild should be used.

      I used about 1/2 a gallon of raw milk to make that yogurt. If raw milk is not available to you, you may use organic milk or any regular milk. Whole milk gives you thick yogurt but 2% milk gives you watery yogurt.

    I am on my to lose weight I just have two questions -
    1. Do I need probiotic capsule everytime or can I use the culture of previous probiotic yoghurt to make next batch ?
    2. Will the probiotic curd be effective if I remove cream from it ?

After the yogurt is made, both yogurt and cream will become probiotic. So even after you remove the cream, the yogurt is still probiotic. You may use the cream to make butter. Please watch my video.       No, it is not "genius" at all. She puts that in because she destroyed the natural probiotics of the raw milk by boiling it. Just because Indians boil the milk does not mean it is "genius" to do that, either. Indians took the habit of boiling the milk, because it is extremely hot in most of India most of the year, if not year round. Milk is fragile and can spoil fast and contaminate easily. Cows can be sick. In order to eliminate any risks, they had to boil the milk.
      Now, our cows are healthy. Farmers make sure they do not get sick, so they also produce healthy milk, which gets refrigerated immediately after milking.
      Conclusion: an ancient habit had its validity in India, in the old days or in primitive conditions. But, here in the West, there is no need for this step. Keep the milk raw and full of its natural potential.

      You can make yogurt with a little bit of yogurt starter, a small amount of yogurt or buttermilk from the previous batch of yogurt or a little bit of tamarind. Put a little bit of tamarind in warm milk and place it in a warm place. Keep it overnight. Hopefully, your yogurt will be ready by morning.

      I bought probiotic capsules from vitacost.com.
      I never bought yogurt starter as I always use my previous batch of yogurt for starter. So I don't know any brand names. But I know that they are available in health food stores or on Amazon.
      You will be able to make yogurt with just probiotic powder. Add probiotic powder from 1 or 2 capsules and follow the other directions that I showed in the video, You will get nice yogurt.

    Will the newly made probiotic yogurt prepared with a probiotic tablet suffice as a starter for the new batch of probiotic yogurt or must we add a tablet foreach new batch?

    What is mean yogurt stater ? It’s the same yogurt in the markets or another thing ?

      A little amount of yogurt from previous batch of yogurt will become starter for this batch of yogurt. There is no need of adding store bought yogurt every time. The very first time when you make yogurt you may need starter from outside. After that you have your starter for ever. Probiotic capsules can also be your starter. Let me know if this helps.

      @@zeinasreeneebus You can use as many times as you want. You may go on using it for years and forever just the same way you use the sour dough bread starter.
      You can freeze some if you want and when you want to use it, leave it out side until it comes to the room temperature.

    I can't find raw milk anywhere. In Michigan, it's a requirement that all milk or cream be ultra-pasteurized, and it won't make yogurt. I wonder if health food stores carry or can get raw milk. Do you know?

    Why does my yogurt/kefir turn slimy? Especially after I refrigerate for more than a day, or as I make the next batches

      Sometimes it happens like that. I don’t know the reason. But when it happens just change the yogurt starter and it won’t come out slimy again.

      Actually, direct sunlight is not a good idea. I have been making yogurt from raw milk all my life (my parents did it), and you want it to be in a warm place, meaning warm ambient temperature. It means, around give or take 23 to 25 degrees C. That is 74 to 77 F. This is not precise science. The temperatures can be higher, but do not expose the batch to sun light. If it is warm outside, set it in a shady place, with a lid on. If it is an oven, you can set it to the temperature and let it just sit, a day or two...

    Keep overnight _ cover w lid _ do not disturb
    Next day we get one big jug yoghurt

      If you don't have starter yogurt, you may use some probiotic powder. If you don't have probiotic powder also, add a small piece of tamarind and follow the other instructions in same way. That should make nice yogurt.

      IF you have raw milk from the farm, you can just let it sit in a warm place for 24 hours or somewhat longer. You can check and see when it is done. Milk ferments naturally, like many whole and untreated foods. In Germany, we call this natural process "thick milk". The cream will be all on top and the milk will be thick and lightly sour, just as yogurt should be. There will be lots of whey around the yogurt, which we just eat as is. But you could strain it out and drink it separately.

      J MAT Do you mean like sauerkraut or fermented foods? I think we can use fermented foods also as starters to make yogurt from milk.. Because they contain probiotics.

    If I do not use probiotic capsule, then will it not be probiotic yogurt?

      Yogurt contains good bacteria. So it is probiotic anyway. The reason to add probiotic powder is to add more other kind of good bacteria to yogurt. If you don't have yogurt starter, you can make yogurt with some probiotic powder. Because probiotic powder contains different kinds of good bacteria like I mentioned on the video. I hope it make sense.

      It was about 1/2 a gallon of milk. For that quantity you can add 1 or 2 tbsp of yogurt starter if you live in the cold climate. If you live in the warm climate 2 tbsp of starter will be too much and it makes the yogurt too sour. You will need only 1/4 tbsp of starter only for the warm climates. You can use 1 probiotic capsule for that quantity.

      I don't think you need to put prebiotics. If you have both prebiotic and probiotic in the same tablet, you can use it and it doesn't hurt. I don't know if it does any good. Someone please explain if you know.

    Boiling raw milk destroys the natural beneficial bacteria and lactase (the enzyme which digests lactose, the sugar) and turns it into normal pasteurised milk.
    If you want to keep the inherent beneficial properties of raw milk and have them survive (and multiply) to the yoghurt stage, its better to bring the milk up to 40c max (about 100-102f)

      @@Reincarnation111 There's definitely that risk with raw, as also exists with all organic food, and the environment we live in. It's part of life itself in all things.
      I had a long chat with a raw milk producer about this before trying raw. It comes down to is a combination of things which can mitigate the risk, to a certain extent.
      For example, the cleanliness of the farm of course (as I understand, most farms in most countries cannot deliver or sell raw milk beyond premises legally so you would need to visit anyway to buy on site - a good excuse to verify for yourself what things look like), and the space within which the cows can roam (do they have plenty of it!), what they're fed and where they graze, how many hours they're allowed out and how they're treated (you might need to determine this one by the personality and confidence in the farmer), whether they're given essential antibiotics only (if they absolutely need them, and not "around the clock", which can then enter the milk in higher quantities), as well as their certification - are they evaluated independently, which, with raw producers is normally the case because commercial, pasteurised milk and farms tend to get their "stamp" from affiliated bodies with vested interests in keeping the industry and commercial farms prosperous and buoyant. Some do both, too, commercial and raw. Just bring questions and ask for details.
      There's a lot more I don't know, but I would say the benefits of introducing the good things found in raw milk outweigh the risk by a long way.
      Research is really important, as it helps to feel good about what you put into your body. Feeling apprehensive about what could go wrong can make you more open to pathogenic infiltration. Instead, imagine being nourished and strengthened and your body will be better prepared to handle anything that shouldn't be there.
      Anyway, hope this helps. There's no true answer except the one you think is best.

      Hey tim I just bought a probiotic yogurt which is made from cow milk, but I wanna culture it in Buffalo milk. Can I add that cow milk yogurt into Buffalo milk? Will it become a probiotic yogurt?

      @@sarveshchronic2604 sure, the key is to keep the temps warm enough so the growing environment is good for the bacteria, but not too warm, as stated in this thread.
      And it's about the bacteria, not the type of animal. That said, there's always going to be some competition between bacterial species when you mix them so it may work really well and taste great, or not work so well and taste bland. One way to find out! 👍🏻

One more thing would I need to add that starter ( cow probiotic yogurt) everyday to the Buffalo milk,or I can use the newly formed yogurt as a starter too for the next day ? The cow probiotic contains a certain strain of probiotic, and I want that in my yogurt everyday

    Need to make it clear that this is a mesophilic variety of yogurt. That is the type of yogurt that cultures at room temperature. Some cultures will not culture at room temperature and will need a yogurt incubator.

    Hi Sasirekha,
    I got this recipe right the first time. However the past few times when I tried to make it when I churn the yogurt in the mixie, I get one creamy mass (the butter does not separate, in fact, it gets all mixed up into one creamy mass). I tried making with room temperature yogurt; added warm water etc. Still did not work.
    Any idea what I could be doing wrong?

      Sometimes for room temperature yogurt you may need some cold water. That is the only thing I can think of.

    when I ask you why would you boil the milk there's beautiful beneficial bacteria and not milk then that is what grows the baby cow and make some strong and healthy so when you pasteurize it you kill those bacteria to me the thing to do would be to let it sit out get room temperature or you could even put it in your the dehydrator at under a hundred and five degrees it won't kill them and make it there and it makes a plentiful beneficial bacteria yogurt I don't know why so many people or heating it up you destroy all the enzymes and the beneficial bacteria than minerals vitamins you lose majority of your benefits and you have to put it back in with something else that just doesn't make sense to me anyway thank you for your video have a good day

      Boiling improves the taste of milk. But when I say boiling, I don't boil in the high heat. I just keep the milk in the low heat until it forms the layer of cream on the surface. The real problem is with pasteurization where the milk will be boiled in a very high heat.

      You can make yogurt without using probiotic capsules. The idea is to add different strains of good bacteria. But you can definitely make yogurt without it.

      Raw milk clabbers on its very own... adding probiotic caps basically gives an advantage to the few specific strains which were especially selected by the company producing the caps.
