Ram's Head method of wedging. I prefer students to learn this method first because it is more simple to get both hands to move symmetrically while understanding the process of wedging.

This is how I wedge, but I always feel like the outside (the horns) never actually get wedged. This part seems to stay stationary & makes me feel like only the center gets wedged.

i think it eventually does because with your thumbs/wrists will push it in slightly to the centre

Literally there is air pocket in you clay at the and!
All you were doing was moving the surface of the clay not the body, which is why it doesn't look like rams head, and has trapped air.
