There wasn’t a big deal made about security back then. It was probably more likely than you think. Just listen to Paul McCartney tell his “Jesus” story. That was insane as well.
The Tower bar doesn't need good press. It's famous for its pool parties, cocktails, and fine dining. Impossible to get a table at peak times unless you're uber wealthy, famous, or both. Great to visit during quiet periods and hangout at the pool, though cocktails start around $30 for something basic, also you can't take photos in the public areas!

His producers find out what each guest's favorite drink is ahead of time, and they are greeted with a bottle of the best of their favorite beverage, and glasses, and are encouraged to relax and enjoy a drink or two. When they get on to the interview couch they have reached the talkative stage of being merry enough to be revealing. I don't know if he was just spinning a yarn or not, but his guests do seem to be very talkative and revealing...
It's the format. Rather than getting five-minutes-max to plug whatever they need to plug, they sit there for forty-five-minutes-or-so just seeing where the conversation takes them. If one or two guests aren't talkative, the others pick-up the slack. And the drinks help.
After seeing this, everyone who has an encounter with the man, should greet him thusly; "OMG, it's Sir Patrick Stewart, from the Tower Bar in Los Angeles!"

It's similar with HM discussing matters with the PM of the day on a weekly basis - it's tradition and the power is technically there, but using it is an entirely different matter.
