Yes. I will make this recipe. One option if you don't have a tube to shape it, is to cut the top off a soda or water plastic bottle and pour it into that to refrigerate overnight. In the morning cut the plastic near the top and peel or peel away the plastic and store in the fridge. I might even pour it into a square loaf overnight since I'm not picky about the round shape. Slicing on an electric slicer will make the thin slices I like or thicker to fry up. I just bought some Lyoner sausage sliced in a package in the store. It is like Bologna. It made only 4 sandwiches (not overloaded with meat either) and it was nearly $5.00 for the package! Looking forward to your recipe since it will really save $$$$.

I tried this and found, rather quickly, that this is a bit like chicken jello. It simply doesn’t have any appreciable stand time at room temperature before becoming unappetizing. Sausage must be dried, smoked or cooked by immersion. There are no shortcuts to a product that you’ll find appetizing. Sorry mate.

I have seen many home made bologna videos, but hands down this was the most disgusting one. just mix/grind the chicken meat before cooking it. for color just add much much more smoked paprika. and any other spices that you like, Instead of gelatin just use 1/5 of the chicken weight in flour. that will work as binder when it is cooking in the oven. no need for gelatin. and mix everything well together and put it in a bread loaf pan and in to the oven,

If you would do this, how can your balogna taste 'awful' unless you are adding too much from the start (before you do a taste-test)? "Less is Best' as you can always add/adjust as you go. Both the texture and the taste of your home-made Balogna is literally in your hands! Just sayin'.

Not only is deli meat nearly impossible to find in the last 3 years, but I just bought some Lyoner (nearly identical to Bologna but I've always liked it better - less salt) and I was able to make 4 sandwiches (with only a bit of meat in each) and it was $5.00 for the little package!
