I haven't visited China but I've tried authentic Chinese food in Singapore. It wasn't for my taste buds at all. We're too spoilt by desi Chinese for all the right or wrong reasons. It was good to know you have such great knowledge about the cuisine and the history around it. But I personally would not go so hard at a restaurant for not being AUTHENTIC especially since the people running it know what works best for the audience in the city. I have worked with this brand for 2 years and I honestly loved the food. Everything I've had was fantastic. And that's obviously because 99% of the people love this as we're accustomed to this taste. I don't think majority of the audience watching this would actually enjoy authentic Chinese food like you do. Great insights though :) P.s I have no personal or professional connection with the brand or with any of it's people. This was a personal viewpoint from a fellow foodie. Can't expect Big Mac where Aloo Tikki is famous. Cheers 😁
Singapore the food is very different than 99% of China. But we hear you, Our issue is: Dont claim to be authentic, dont say its a slow roasted pork when it is fried, dont say its BBQ Char Sui when its just fried porl belly. Dont bullshit the customer. If you watch the restaraunt, we repeat it often, if this were Indian food then it would be ok, its simply not Chinese.

A Chinese guy said about Chinese restaurants in non Chinese countries- any authentic Chinese restaurant won't have a name that has Chinese association (mandarin, Shanghai, great wall, Schezwan etc). It will be just a regular name
My father took me once to a small chinese restaurant, it was run by a chinese couple I didnt like it, my father said just because you mostly eat the indian version of chinese food you are not liking it. I guess I was 10 or 11 at that time. I don't recollect the name wild guess will be Dukes somewhere near Mazgaon or Byculla. Almost 26 years ago.

If Chinese cuisine in its original form was served across the world, it wouldn't be so popular. I've been fortunate to try Chinese food in USA, Canada and India and it was their version of Chinese. I would probably rate authentic Chinese the lowest based on my taste buds

It's only in the past decade that there's been an interest in regional Chinese but even in that the recipes are tweaked by increasing the protein, increasing the spice proportion to reduce the blandness, etc.

This was on point . For someone who has lived and worked in China and has been a die hard fan of Laziji I did not find one bit authenticity at this restaurant or many others who claim to be authentic. Also since you guys are well traveled I would recommend going to Mala Sicuan in Houston! F'ing amazing Sichuan cuisine. Obviously some of the dishes are authentic but not all. It takes balls to call it out loud. I also like the fact that compared to a lot of other food critics you don't taste but eat. But again indian chinese has its own swad and we should proudly own it. Loved it guys!
Mala Sichuan in Houston is good, the fish their is on point. The entire area past the Hong Kong city mall bu Sam Houston tollway and Bellaire has so many nice Chinese options.

Our problem is the fact that in the garb of authentic this restaurant charges 4 times more than any other Chinese/chindese restaurant. Call it indian Chinese and set the expectation right. That's all we calling out. We won't apologize if it fits. Cheers mate

You won't get it in India. Quality/availability of authentic international cuisines in India is very poor. So be ready to travel if you want to eat authentic food from other cultures 😁
I think these guys should have a show recollecting their experiences in different countries. It would be helpful as a guide. It could have the local etiquette, the culture, etc. I would definitely watch that. Also Sid would make a great host on shows regarding Introduction to Life in China as he's lived there for many years

I've been following your work for sometime now, hats off to you guys. However, one thing I don't get is this: you expect authentic Chinese dishes but don't take into consideration Bombay's demographic, we don't like authentic we like it indianised. And that goes from Chinese to Lebanese etc it works wrt the alcohol too. I've been searching for authentic Japanese food in Bombay for years with no success and the reason is simple, these joints don't get good business because of its authenticity. Anyway love what you guys do and keep up the good work! and if you ever feel like eating good goan food, my place is always welcome! Cheers
Authentic food outside its home country is only found in a place where there are a lot of immigrants. You don't see a lot of chinese in any Indian city, so chinese food will always be modified to the indian tastes instead of chinese ones
Hey Sid, hardly any authentic Chinese this part of the Malacca Straits. There are some places with Authentic chinese (refugee chinese family joints) but those are places you don't want to travel to in Bombay.
