I'm a hot house tomato. My trips are pretty much exclusively in June and July :) I used to go out when it was cold. Then I got old.

Any "dry" sack with a air out valve is not waterproof. A valve that let's air out will let water in. That's not how a roll top dry sack works. I recommend Sea to Summit or Seal Line dry sacks.
Thanks for the intel! In this situation of bikepacking where the waterproof bag is not actually submerged in water, this kind of bag with an air valve works great in being able to compress the bag and keep moisture out from rain or snow. It's plenty water proof for this situation, especially in the Arizona desert where it rarely rains. I agree that for full submersion needs, a roll-top closure is the gold standard for dry bags. Sea to Summit makes great lightweight stuff and I have a fair bit of their gear.
