Awesome episode! Very informative. I used to be a bar manager at a Japanese restaurant and getting people to even try sake was like pulling teeth. And we had a great list! Should be required watching before you go in to any Japanese restaurant.

You’ve missed one of the most important notes to remember. The S.M.V Sake Meter value which by looking at the back of the bottle, you can tell if its going to be a drier sake or sweeter or a medium body

The biggest problem I have with this video (and the sommelier) is that this is supposed to be informative- and she is supposed to be an expert- but they don't even address the fact that "sake" isn't even the name of the drink. "Sake" is a general term for alcoholic beverages in Japan. "Nihonshu", or "Seishu", is what the West calls "sake", and specifically refers to the clear rice wine.

+Jordan B Normally for tastings such as wine, you take a sip and swirl it around your mouth. But you don't swallow it, you spit it out into a bucket. This way you can proceed through the tasting without getting drunk. Thanks for watching!

Amazing video. Never would have thought Sake could be so versatile. I love pairing food with different beers or wines. And enjoy different spirits. But never "enjoyed" a sake outside of the bombs.
This may be a dumb question, but do you drink this room temperature, chilled or warm like they give it to you in the sake bombs?
Why do people say sake like that. Its (sah-keh) not sah-key; oh my gosh it doesnt take much to pronounce the word in its original language.

I'm hearing saki is only 18% alcohol. So it must be half way between wine and liquor.
the thing is you drink it hot so it hits faster.. and it doesn't go down as harsh as liquor so you drink so much of it and the next thing you know your pretty wasted
at least from my experience anyway.. i'm sure different from others

It would be cool to do a test where they identify the different flavor compounds that the som thinks is in the wine.
Looking at the actual chemicals, instead of going off of taste/preferences of the individual soms.
Cause right now, some of the stuff around being good som, seems like a emperors new clothes bit.
Does not seem like there is a lot of actual science to it.

Sake is not only 20% or less.

Oxidizing in the bottle without oxygen.. doesnt make sense
Yeah I had to scratch my head on that one. I study the chemistry of beer and I'm pretty sure something can't oxidize unless it, you know, touches oxygen. I mean, you could pour hydrogen peroxide in and get a reaction, but I think she went off the pseudo-science deep end when she mentioned it could oxidize without oxygen because it has glucose and starches. I hope she didn't read that somewhere and keep repeating it, because it doesn't make any sense. Maybe she was nervous on camera and just said some random thoughts in her head.

Sake is often too high in alcohol content to actually enjoy pairing with food for me and even when it isn't, it still tastes much more like a spirit than a "wine"

Sake is comparable to wine (in terms of alcohol content), and wine has been drunk together with food since at least the Roman times.
