  • If you’ve ever had to order sake and had no idea what you were ordering, we’ll tell you the basics you need to know. What’s the difference between sweet and dry sake, how’s it made, and what should you look out for when you’re buying sake. We’ll taste a few sakes as well and compare the differences.

    Love these super informative, breaking it down sort of videos. When buying sake before, I just went by whatever the wine/alcohol store described the flavors as, but now I know how to read the label, so thank you for that. 😄 Definitely trying out that Daiginjo sake next time I get a chance.

    I have been living in Japan for almost all my life, but since I don't drink ANY alcohol beverages, I had absolutely no knowledge of sake. I learned a lot from this video. Thank you !!

    Thank you guys for explanation for Sake, because it's very difficult to teaching Sake to foreigner. I will try to enjoy Sake with my friend next time and I will teach them.

    I haven't been to Japan, but my best friend has. She brought back dango and three types of sake - pretty much one of my favourite memories is her sharing this from her trip with me while we caught up in our pyjamas.

    Hey here's some more Saké tips:
    my recent discovery in the production of Saké, and indeed Nihonshu (Unpolished, non-distilled, CLEAR rice wine... the clarity is what they measure to grade it in Japan, but distillation is non-traditional)
    is if it is fermented in cold temperatures like room temperature or below you get an incredibly strong Umami flavor which tastes like cheese or vodka, kind of has a really Astringent quality that clings to your tongue kind of like a film of rice cake... taste kind of like vodka but sweeter, and, more cheesy, mushroomy...thats fermented at a cooler temperature.
    if you fermented at like around or slightly above 70° F the yeast makes it like a green apple or citrusy kind of flavor, with less Umami, and this is because yeast, at different temperatures, metabolizes things differently.
    at a lower temperature it produces more ethanol in Aerobic conditions, whereas at a higher temperature it's metabolism can produce things like acetyl-aldehyde which is a green apple flavored ester of alcohol....very sour
    I've also found some Rice that grows native in the Midwest. But I use the cheap, store bought rice, and wild, homemade Koji.... if it works with mehh rice, then it will definitely work with better rice. I don't polish because the yeast and Koji combined basically dissolve the rice into a Goo... it kinda reminds me of Sumerian Meade, where you have rye grain and sourdough, instead of rice and Koji, which is basically all the same

    OMG There's a place in Osaka where I learned about all this last spring! It was such an amazing tasting experience! The sake cost like 200¥ a cup (a bit bigger than the ones I see on your video). Some of the sakes needed to be drunk in a special terracotta cup, which magically changes the texture in the mouth. It was sooo sublime to compare all of them together (12 to be exact XD)

    I've been scared about sake because of a burning taste. Good to see a video like this because now I can try the sweeter one.
    Also curious. Do you like soju or sake more? Or is there not much of a comparison?

      If you don't like burning, don't drink soju! I can tell you that I've never met a single person that enjoys the taste of soju. HAHA! It's more like a drinking event that you do and laugh and cringe on the way down. I have many warm memories of drinking soju with grilled meat and playing games, but it isn't delicious. We also tried to do a tour or interview with ANY SOJU FACTORY but they refused. No one even knows what soju is actually made of because they aren't open about it like for example a winery or sake brewery. So sake all the way!

      7-Month recap. Have had a few different types of Daiginjo on several different occasions at this point and wow.... just... wow. SO GOOD!!!! I had to watch this video a second time. Watching Simon pour the Daiginjo made me think about me pouring the Daiginjo for the first time and what it was like for me to get that flavor and experience.

    Just a random thought:
    Seeing your videos pop up makes me feel happy to be alive. I watch all of your videos and listen to your podcast on sbs popasia and just think, what incredible human beings. I could not think of two people more perfect for each other. I tune in to everything you have to say because it gives me hope that someday I’ll find the spirit and joy you both bring to each other. I know it’s a simple thing, but in these days, and especially this world, I’m starting to think it’s not so simple. However, you give me such hope for a mere 15 minutes of my day and inspire me to do great things. I just came back from a two week high school exchange in Japan, and I would say it’s all thanks to you. I’ve gained confidence from you and I’m very thankful. At the beginning of this year, I was struggling. Almost ending my own life, I thought there was no way up. But you two helped me!
    With no teachers or friends, I ventured off on my own to discover a new life which I didn’t realise I needed so bad. I hope to one day live in Japan and enjoy every single day! Thank you for everything! #Buildaladder

    In many blind wine taste tests, neither experts nor common people could distinguish between cheap and expensive bottles. Do you think your comments will stay the same if those sake prices weren't given to you before tasting them?

      There is a clear clear clear lack of burning when you try a very polished sake. It really is much smoother. It's like the difference between drinking cheap tequila and high end tequila. When it comes to the in-between sakes, I think price isn't as important since it depends on what flavours you prefer. But I will say sake experts agree Daiginjo isn't expensive because it is labelled as "better", it is expensive because they have to use more rice. I've read that some sake lovers don't love Daiginjo because they find it TOO smooth. So interesting right!

    I literally paused in the middle of the video and drove 20 min to a whole food at 9.30pm to get try my first sake in my life. Good learning and will try to taste more in the future.

    Loved your video! You both are so funny! I had no idea about these different types of Sake. I only buy the cheapest bottle (Junmai Sake) and I drink it warm. Warm Sake helps with any cold or cough in my experience. Thanks!

    My husband shared a bottle of Pre-WW2 sake with the chefs at a sushi bar that he frequented often... the bottle cost $1800 USD at the time (30 years ago) - he said it was the best he ever had and knows that he'll never top it! (I'm jelly, btw... I LOVE sake!) He says that it was stored in a rice sack, and room temp when they drank it. Such an amazing opportunity!!

    Wow it was such an informative and entertaining video about Sake, learned a lot plus it was funny, can't go better than that :D I loved also the interview part, could listen for hours (well, of course with subtitles haha) would love to see more like that. A great way to show us Sake thank you for sharing ^^
