Caterers' tricks: A *very* thin layer of unsalted butter applied to each slice of bread doesn't affect taste or texture, but it provides a barrier that protects the bread from moisture if you make the sandwiches ahead of time. For children's parties, baby showers, theme parties, etc. large cookie cutters make cute sandwiches. Bon Appétit!

I also always add tomato and it never goes soggy. I cut them thinly and salt them….they leak out a lot of their water that way, then I never have them touching the bread….and the bonus is that I can dip my toast in all that delicious salty tomato juice!

The best advice I can give is don't let them sweat. When a grilled sandwich sweats it looses it's crispy texture.

No, it's not just adding mustard and mayo that stops it going soggy, it's a combination of the gluing and wrapping!
