Jess, you look tired but happy. You're such a strong hiker that to feel as tired as you are the trail has to be just insane. I've been to the top of Mansfield as my sister used to live at it's base in Jericho, and it is beautiful but also very Franconia Ridge like. Hang in there girl, you got this! Concentrate on the trail, not the schedule and you will be there before you know it. geek
Judging by AT standards with 1 being the easiest parts of the AT and 10 being the most difficult, how does the LT compare? What sections is it comparable to?
I think that issues you're struggling with are amplified when you're solo hiking. I love to solo hike, but when the going gets tough, having others to motivate you, push you forward, give you encouragement, and help you pass the time---then it seems more easily doable.
Of course, since you're long done with this hike, my comment doesn't matter much. But I was going to say you shouldn't be hiking to Whiteface because it is in NY, in the Adirondacks. I'm pretty sure that's true. If you did, then I am mistaken.

I have the same problem with energy drinks. Burst of energy followed some time in the afternoon by a crash.
