Thanks Sanjay garu. I got this perfect restaurant style in my second attempt. Below are my ingredients list for those who want to try in first attempt itself. As mentioned in video, I kept marinated chicken overnight in fridge(not in deep fridge) about 8-10 hours and soaked basmati rice for an hour. Chicken 1/2 kg Basmati rice 300 g Fir Marination powder: Below ingredients will give 1 1/2 tsp to 2 tsp after grinding in mixer. I did not use whole powder. Added as per chicken quantity. Cinnamon 2 medium size Cardamom 4 pieces Cloves 7 Pepper corns 8-10 Mace 1 medium size Anas flower 2 medium size Biryani leaves 2 medium Biryani flower - very little portion Curd - less than 1/2 cup Coriander, pudina- handful Cumin powder 1/2 tsp Coriander powder 1/2 tsp Turmeric - pinch Red chilli powder 1/2 tsp Chillies - 2 Oil 1/2 cup for marination
Hi chef, I think a thanks from my end was long overdue. I've used this recipe to make Biryani for over 6 years and have served to many of my friends and family. I've been showered by appreciation from my peers. My cooking skills come up in every gathering saying that your Biryani is the best! Biryani comes out perfect with this recipe everytime!! Not only this but your other recipes are so good. Thanks so much.
I got it right 3rd time. But some tips from my side: 1) Use proper cooking utensil and sealing (as mentioned in the video), if steam escapes you will never get the taste. 2) Make the biriyani powder very fine, if still coarse then use a strainer to filter it out (You can use the coarse powder for other gravies). And don't use more than 2 spoons of this powder for 1 Kg biriyani 3) Do not blend the green chilli - mint - coriander leaves. It will spoil the color and also taste. (Blending this is OK for large quantity as in restaurants I guess) 4) Proper Salt is crucial (for both meat and rice) 5) At any cost don't use vinegar in place of lemon juice/curd. It will totally spoil the taste (I did that once when lemon was not there in the kitchen) 6) Basmati Rice should not be soaked too much (if it is not hard enough or old enough). The rice may start breaking and will not remain grain while cooking. 7) Onion should be deeply fried. Otherwise you won't get the desired taste. Don't be in a hurry. Fry it patiently till golden brown (till it becomes dry & brown) just like frying Pakoras, and not like how we do it for gravies. If the onion is not fried properly and remain soft & mushy, then it will be more of pulav taste! Use adequate oil, only then you can fry it properly. You can use the same oil for marination and also for any other onion based dishes (including vegetarian) in next 1 or 2 days. The aroma will be good actually. 8) Finally, do not compromise on any ingredients and follow the recipe thoroughly! Otherwise the chef has done a great job in motivating you to cook and given the best recipe & method!
Madhu P Jadhav can u tell me the quantity of spices you used for 1 kg of chicken as i couldn't get the correct amount of spices and every time some spice taste comes more than others so i wanted to know the correct proportion of the spices.
I have tried Biryanis even before getting to know about Vahchef using whole spices sometimes and powdered ones from stores sometimes. I couldn't get the desired taste. Then I felt I should try home-based masala and did masala on my own (even then it didn't come out well, to an extent that my family asked me to stop trying and order it from restaurants... Eating in restaurant/getting parceled is one thing. But nothing can beat the pleasure of doing it on own, and eat the best & hot biryani! My Aunt was preparing nice tasty Biryani when I was a kid and I she used to serve it so hot! So I didn't want to give it up!) So I watched Vahchef's recipe carefully and felt that "powder" (self-made) is the best thing to try! I followed his method of preparing, but looked google for written recipe of biriyani-powder (and their tip!). The trick is to make that powder and use the fine powder by straining as I explained. And add just 2 spoons for the marination. In your case you are telling 1 kg chicken, so your whole package could be 1.5 to 2 Kg (including rice). So you can add 3-4 spoons of powder. Besides you should add the limited whole spices onto the boiling rice as explained (rice should also get flavored internally). Good luck!

I tried your recipe for the first time today and it really turned out perfect for me. I myself was surprised how it turned out so good for non cook like me. We really enjoyed the biriyani today and I want to thank you for this easy to use recipe. Thank you Sir. Tips: 1. Take extra care during sealing and follow what is said in the video exactly otherwise the steam will escape. 2. And reuse the fried onion oil through out even in boiling the rice. 3. Overnight marination really helps.
@@sidheekha.p1156 Its a usual alumunium biriyani pot. If u follow 5 minutes high flame, 15 mins low flame and then put the dosa tawa on low flame and put the pot in dosa tawa (putting in dum) for 15 mins, you will not get burn. Did this 2 times already and everytime it came out without getting burnt. The only challenge is the steam still goes out despite my best efforts to cover it up with chapathi dough. Need to find another way to arrest the steam going out. Anybody has any other idea let me know.
I tried your recipe as closely as I could, that is i used an already made garam masala instead of grinding the fresh ones, also i didnt put any kewra and rose water in the end, but all the rest of the ingredients are there, and it turned out beautiful..how much more if I followed your recipe to its exact point and measurement..perfection! I just cant compare curries cooked from scratch to the already made sauces bought from the shops, I didnt like the smell or taste of it. But smell and aroma of curries cooked from scratch is heavenly!

I love this biryani...i have seen this video 3 years back and tried it...it came very well. Till now i follow the same recipe.. i follow the same steps but not using coriander powder, jeera powder, rose water,kevra water... remaining process all is same...also i use aluminum foil for sealing steam not chapati dough...thank you vahchef for ur biryani recipe.. my family loves it.... whenever that biryani masala powder is finished, i open this video and see the masala ingredients again and make the powder and store it for next 3 biryanis. ...😀 Thanks lots of love .....

Some tips for others who want to try. 1. Chop coriander and mint leaves finely 2. U can use colour instead of saffron in same way i.e add colour in milk mix and then spread on top

The spices should not be more than 20 bucks. any local indian store should have them. or even middle eastern stores. or if when really in a crunch, just get biriyani powder [abt 5 bucks] and then marinate the chicken with it. Good luck

I tried your recipe for the first time today and it really turned out perfect for me. I myself was surprised how it turned out so good for non cook like me. We really enjoyed the biriyani today and I want to thank you for this easy to use recipe. Thank you Sir.
Tips: 1. Take extra care during sealing and follow what is said in the video exactly otherwise the steam will escape. 2. And reuse the fried onion oil through out even in boiling the rice. 3. Overnight marination really helps.

@@sidheekha.p1156 Its a usual alumunium biriyani pot. If u follow 5 minutes high flame, 15 mins low flame and then put the dosa tawa on low flame and put the pot in dosa tawa (putting in dum) for 15 mins, you will not get burn. Did this 2 times already and everytime it came out without getting burnt. The only challenge is the steam still goes out despite my best efforts to cover it up with chapathi dough. Need to find another way to arrest the steam going out. Anybody has any other idea let me know.

@@serah2enrique These days I am using cotton cloth to cover the pot and put the lid on top of it. Almost no steam is coming out.

I tried your recipe as closely as I could, that is i used an already made garam masala instead of grinding the fresh ones, also i didnt put any kewra and rose water in the end, but all the rest of the ingredients are there, and it turned out beautiful..how much more if I followed your recipe to its exact point and measurement..perfection! I just cant compare curries cooked from scratch to the already made sauces bought from the shops, I didnt like the smell or taste of it. But smell and aroma of curries cooked from scratch is heavenly!

I love this biryani...i have seen this video 3 years back and tried it...it came very well. Till now i follow the same recipe.. i follow the same steps but not using coriander powder, jeera powder, rose water,kevra water... remaining process all is same...also i use aluminum foil for sealing steam not chapati dough...thank you vahchef for ur biryani recipe.. my family loves it.... whenever that biryani masala powder is finished, i open this video and see the masala ingredients again and make the powder and store it for next 3 biryanis. ...😀 Thanks lots of love .....

Rizz zz Hi, I hope you don't mind me asking you. Did you fully cook? the marinated chicken first then added the rice on top and close the lid?. Or the chicken gets cooked while rice is on slow heat to be fully soften..

1. Chop coriander and mint leaves finely
2. U can use colour instead of saffron in same way i.e add colour in milk mix and then spread on top

I love his spirit and his joy of cooking. I would love to make this but my fear is I would have to spend about $100 on spices and flower waters and it would all go bad before I could use it all. I am now on a mission to find a place near me that serves this and I will RUN not walk to buy some. BTW...HE HAS OVER 17 MILLION VIEWS ON THIS!!!!!!!!!!!! WOW! that is awesome.
The spices should not be more than 20 bucks. any local indian store should have them. or even middle eastern stores. or if when really in a crunch, just get biriyani powder [abt 5 bucks] and then marinate the chicken with it. Good luck
