I like to so my leafy herbs, if not in my dehydrator, (oregano, parsley, cilantro, sage etc.) in my microwave...only takes a few minutes. Just need to make sure they are as dry as can be and put them between two paper towed or cotton dishcloths and do t over do them...the leaves come out as green as you put them in..

What is the location for the herbs to be lasting through the winter?

I am zone 7 in Virginia. I do occasionally lose rosemary if it's very harsh winter but the others overwinter very well.

How long can you keep them for before they expire?

As long as theyre not moldy u can store them 1 year. The less air in ur containers the better. I refill a small container for kitchen use and have larger container stored in a dark cool place. U can take an extra step of removing the air from jar, like with a vacuum sealer and oxygen absorbers if u plan to store for longer than 1 year. Ur humidity and storage containers can affect quality so if ur in a high humid region just make sure u have less air in containers and regularly use herbs so its not forgotten. Generally 1 year stores very well, from 1 harvest to ur next harvest is the optimum storage time, after that flavor and volatile oils within herbs really fade. Hope that helps take care 🤗
