Just FYI. The quesa-birria taco is kinda the newish trend of a quesadilla (melted cheese in a tortilla) with birria (traditionally goat meat) combined. As others mentioned usually with a consume au jus type liquid. If made well they are quite tasty.

Most places here in the states are using beef for the birria where traditionally and still mostly in Mexico it’s made from goat meat. If you ever have a chance try the goat version. A bit stronger flavor but more authentic.
Promise me that next time I go to Vegas you guys take me here! I NEED bottomless tacos and margaritas! I can't believe I didn't see this last time I was there 😂
