I'm a barista. Usually stale coffee will give you the burnt taste. The moment you open a bag of beans you don't have long to use it. That is why 7/11 is equivalent to instant coffee. Grinding the beans speeds up how stale the coffee becomes. Bad places just don't have a good process of making coffee and take shortcuts all the time. An good place will have the right processes but not push coffee to the limit. The amazing places treat coffee like a science lab. Down to what beans, what equipment brands. A lot of cafes won't spend the money of the best equipment and when something breaks it makes owners less inclined to spend money on the fix.
If you take 7 miles for example, using one type of beans for full cream and another for long blacks, most cafes owners don't see why that can be a good thing. They're more worried about the time wasted cleaning, having multiple grinders, just things that require more effort. Sadly to say, there is more bad coffee around than good ones.
Coffee flavours are definitely a preference. For most people a mixed blend is usually what is preferred. It takes a mix of light and dark roast beans that give a good middle ground flavour that is not too acidic or too sweet. Coffee snobs will judge places and people who like sweet coffee. They feel like you're just drinking milk if you don't get that strong hit of coffee flavour. That is why some places ask you what beans you want because every has different likes in their coffee. We're not talking about people who ask for an insane amount of sugar, ask for weak, ask for extra hot etc. Those people have no idea about good coffee.
its because the make the roast to dark that better for espresso then milk based coffee especially starbucks as they use the same house blend in aus as they do for the us which tends to be more americano or black coffee then milk based if i ever have to resort to starbucks i use their blonde roast for milk based which is a lighter roast and has a smoother profile
Ona is one of the specialty coffee icons of Australia. The grape you were tasting from 7 was down to the origin of the beans. Yes us coffee nerds are wack jobs.

Bra the reason you taste grape is because coffee beans come surrounded in a fruit off of the tree. Some beans are processed which means the beans are dried inside the fruit which makes the coffee taste fruity. I work in a coffee roaster and I’d bet that the grape tasting coffee was dried in the fruit!

It's not just about the coffee beans used or how the barista makes it or what coffee machine is used and how clean it's kept. The biggest secret is what milk is used. And in my opinion Pure Jersey Milk is what your looking for. Fatty and Thick. Top of the milk chain

Also to note, im big on my coffee and very picky, and i must say 80% of places that sell coffee do not know how to make coffee and this is a big issue. I order caps and theyre either full of milk and barely any coffee or its made like a flat white with no foam..

As a barista a coffee is 50% beans 50% barista so it really comes down yo who is working that day as to how good it really is... my professional opinion is Whitehorse Cafe Sutherland.

Roasting the beans in-house, they’d be saving on a lot of distribution, Starbucks would paying for the transportation of the beans, then to roast them, the packaging of the bags, then to a warhouse, then distributing to shops.
