- In this cake decorating tutorial, I show you how I made this yummy Citrus color inspired wafer paper ruffle Cake! I will admit that this is more of an advanced technique that requires a lot of patience. But having said that, the results are well worth the time;) I am editing and uploading this while away on vacation, so I have limited wifi. I am not able to get on my laptop to attach links or even edit the final video the way I like to, but I hope you enjoy this anyways. If you have questions, please let me know!

Oh probably a couple of days along as you keep them in a cool dry place. They may want to curl up a little bit, so just keep that in mind.
Great tutorial as always! Question - do you use Swiss buttercream to frost your cakes? And after the wafer design is attached, will it be safe to put it in the fridge overnight?
I usually use fondant under wafer paper. Because moisture can melt it. If anything I would use American before Swiss or Italian since it crusts over. I have stored it in the fridge but make sure it is low humidity;)

Thank you;) I would share, but the thing is that we use a lot of my recipes at the bakery I work at and I don't want to step on my bosses toes. She probably wouldn't care since they are mine and she is pretty awesome;) but I need to feel that out more. Stay tuned!

You guys are cracking me up!! I may do that some day, but the problem is that we do use a lot of my recipes at the bakery I work at and I don't want to step on my bosses toes. She would probably be fine with it since I came with the recipes and they are not hers, but I want to be respectful of her too. Does that make sense?

Simply Beautiful! I have some technical questions. Did you refrigerate the cake with the wafer paper afterward? If so, when you took out did you have venue re-refrigerate? And if so did wafer paper melt, fold or wrinkle from the different temperature/humidity of room? I’m looking to make a two tier (wp) wafer paper cake with one tier ruffled and one tier with paper flat on cake. Just not sure how to refrigerate and then take out and what can happen to wp. Any help would be so appreciated!!
Hi! I actually did refrigerate it and it was fine. Although this was eaten by my family and we didn't leave it out. I did deliver a wedding cake last weekend that had a tier of triangle shaped pieces of wp covering it. We left it in our driest fridge over night at work and I deliver with dry ice, which takes wetness away instead of adding dampness like you would get with regular ice. THat is why I like it:) It did curl a little bit over night, but it still looked really good. I just left it at room temp at the venue since you can never tell what humidity theirs may have. It is the enemy isnt it?:(

Well under the fondant it is buttercream;)
Making the ruffles from the wafer paper is so hard. I tried it and it didn’t turn out well. I’d try it again though

Can we do it on a fresh cream cake ..?? Plz answer
You can with a crusting buttercream. Brush melted cocoa butter onto any surface that would be touching the buttercream ( the back) and let it dry. Then just put a dab of buttercream on the back and stick it on. I have never tried it on a non crusting buttercream because I typically don't use it. I think it should be fine as long as you protect the back with the cocoa butter;)

You do want to keep your fingers a safe distance from the steam and sometimes it does get you.

Oh you are very sweet;) Thank you;) I do prefer marshmallow fondant. Especially Liz Mericks recipe. But for ease and since I do these videos on my day off, I tend to buy it pre-made. My favorite is Carma but it is very expensive. So I use what I can get on Amazon. Satin Ice is my go to for that;)

I think it was from top down, 3 layers 6", 2 layers y" ,and 3 layers 8". That was a while ago;) my pans are all 2" high.

So pretty 😍...sadly wafer paper in my country is way too expensive...I hope u do an alternative like rice paper, maybe.
You viuld use rice paper, but it would have a different look, but would still be pretty!
