    Recipes in this video:
    Refrigerator Pickles:
    2 large cucumbers
    1 cup vinegar
    1 cup water
    2 tsp. Stevia Drops or 1 cup sugar
    Dried dill to taste.
    Pickled eggs: (1/2 gallon)
    4 dozen quail eggs ( or however many chicken eggs will fit in a half gallon jar)
    6 tbsp. Kosher Dill mix
    2 cups water
    1 cup vinegar
    Beef Jerky:
    2 lbs. lean ground beef
    2 tbsp. soy sauce
    2 tbsp. Worcestershire sauce
    2 tbsp. tabasco sauce
    2 tsp. salt
    2 tsp. black pepper
    2 tsp. garlic powder
    2 tsp. onion powder
    1 tsp. cayenne pepper
    Smoke/dehydrate at 185 degrees Fahrenheit for 2.5 hours or until done. If worried that internal temp. did not get up to 165 you can put in a 300 degree oven for 10 minutes after smoking/dehydrating.

    Kevin--- I have a good onion ring keto idea for you... Take a donut baking pan-, put a little shredded cheese in it, add round slice of onion on top, add some cooked chopped bacon, and a little more cheese. Bake in oven. They should pop out looking like onion rings. You can also add cooked shredded chicken w/ the bacon, and some ranch seasoning. Deliciousness!! God bless!!

      How long and at what temp did you bake them? Was the onion cooked soft? Sounds ingenious!

      @@eldenl1 for about 20 minutes at 350. Watch to make sure they don't burn. Even if someone isn't doing keto, this is a great snack. Can't go wrong with cheese, onions and bacon. :) ooooo and maybe add to those some minced jalapenos for some kick. Cheap donut pans will hold it all in place...

    My grandmother always had refrigerator pickles in a Tupperware container. All she used was cucumber, onions, vinegar, water salt and pepper. They were great!

      That green square Tupperware container where you pull the handle and pull the pickles up out of the juice? That container brings me back! Mother kept one of those full at all times.

    I mentioned this before but since your cucumbers are ready, I wanted to remind you. I juiced some cucumbers at the end of the season last year and froze them in ice cube trays. I also froze lime juice in ice cube trays. Over the winter, I pulled out a cucumber ice cube and a lime ice cube. I put both in a glass and filled it with water. I added one drop of stevia. Summer in January! It doesn't take much time for the ice cubes to melt. Just twirl your glass or mix with a spoon. Ususally I just start drinking it and add more water. Delicious!       OMG, I made the cucumber lemonade last year and it was so yummy! My cucumber were stunted due to a cooler, wetter spring, so I had to start over, accidentally droppibg extra seeds. I figured I'll just make extra cuke-lemonaide and freeze it. Cucumbers and lemons are so nutritious!
      I don't like the taste if stevia and started using monkfruit, which sweetens with no after taste.

    I made your beef jerky!! It turned out so good. I appreciate your recipe. I ordered me a jerky gun and cooked it in my oven. I made ours with a little less heat and I added 1/8 teaspoon of liquid smoke. My husband and I really love it. You and Sara both are such excellent teachers and inspire this 72 yr old gal. Love you both. We have been subscribers for over 3 years.

    Omg Kevin, my grandmother used to have that same Cool Whip container with the Cucumber and onion salad in the fridge. That was one of my favs. She had a garden when I was growing up. It was the best! Tfs! Hope you guys have a great week.

    All of your snacks look delicious! I have chicken eggs ready to pickle. I think I even have the pickle mix. I haven't tried jerky yet. I have to buy beef from the grocery store & it surely doesn't look as pretty as your home raised beef. I have seen people using a rolling pin to flatten jerky mixed meatballs. That's what I'm gonna do. Have to dry in my dehydrator. And the refrigerator pickles, well, I keep some going all summer. Thank you for the demonstration. You make it look so easy!!

      I set a paint mixing stick on each side, so the rolling pin rests on the sticks. Makes perfect thickness of jerky.

    Love your snacks, and will definitely be trying them. I don’t have quail, and I’m not supposed to eat egg yolks, but I will make myself a small batch. Mom, and now I, have made cucumbers and onions for years. It never occurred to either of us to put them into a mason jar, but I’ll try your recipe and put them into a jar. I had to chuckle a bit…I’m wearing that same T-shirt today, except nine is blue. Thanks for the recipes! 😊

    Great video, Kevin! I don't have quail eggs or a smoker, but I am definitely going to try making all of these keto snacks! Thanks for explaining that they can be made with regular eggs, an oven or dehydrater, and non-keto if desired. I am especially excited to know that I can make my own jerky. I love beef jerky, it tempts me every time I'm in the checkout line at the grocery store or Walmart, but it is so expensive that I rarely buy it.     I don’t have quail, but last fall when my pullets started to lay I pickled their tiny early eggs and water bathed them. I still have a few pints left and I’ll soon be able to replenish with this year’s new girls’ eggs. I had never even tried a pickled egg! The recipe I found for Amish mustard eggs is my favorite. They taste like deviled eggs. I also did some with red pepper flakes and sriracha for the hubs. Thanks for sharing so much of your life with us!

    Thank you. My wife is Hypoglycemic so we keep keto snacks. Pimento cheese is a favorite. In a pound, I add three sweet sliced pickles diced finely, not hardly any sugar but enough to keep the flavor. You could use your pickles. God Bless and stay safe.

      You might want to use your oven or really know your ground meat source to avoid the possibility of e-coli.

    We cook (boil) chicken eggs in instant pot. You will not believe how easy they peel!

      The best way to hard boiled eggs. It’s worth having an Instant pot just for doing hard boiled eggs.😊

      @@nancyfahey7518 Use the 5-5-5 method.
      Add an inch or so of water to the insta-pot and put in your rack. Put the eggs you want to boil on the rack. Cook for 5 minutes under pressure. Once the 5 minutes are up, release the pressure and allow them to remain in the insta-pot for 5 minutes. When the second 5 minutes is up, the eggs go into an ice-water bath for 5 minutes. When that 5 minute icy bath is up, easily peel and use the perfectly cooked boiled eggs.

      I will never do boiled eggs in anything but a instapot now! It's just so very easy! I do the 5-5-5 method unless they are jumbo x-large eggs and I'll do 6-6-6 method.
      Pressure cook on high 5 minits, less sit for 5 minutes, release the pressure, put in cold water ice bath for 5 minutes. Peel and you have perfect boiled eggs!

    I've sliced cucumbers and dusted with favorite spice (ranch powder, spicy ranch powder) and freeze dried. My adult kids and the grands love them. Yellow squash would be good too.

    I have been doing keto for awhile and using chaffels as a bread sub. I had sausage gravy this morning on a chaffel.
    Chaffels
    2/3 cup. Grated mozzarella cheese
    1 egg
    2 Tabelspoons almond flour
    1/2 teaspoon baking powder
    Mix all ingredients till well combined
    Put about 2 Tablespoons in to a mini waffle iron and bake.
    Do not over fill or it will run out and make a mess on your waffle iron.
    Also good as a bun substitute for a bacon cheese burger.

    I love making fridge pickles! My husband LOVES pickled quail eggs. We usually buy them from his cousin but we're going to be getting our own here soon! 👏 & the beef jerky- I've stopped eating it because it's SOOOO expensive, and I didn't want to invest $1000+ on a good dehydrator. But smoking them, and using ground beef- I never realized you could do that! We have a lot of Deer meat about to get freezer burnt that I'm going to try this with!

    Reusing a Cool Whip container. The original recycle plastic. I remember looking in several of those containers trying to find something specific. We also had all those colorful mixing bowls too.

    The cold water treatment keeps the egg yolk cold. The extended boiling time is for properly cooking the cold yolk to perfection - versus oxidizing and greening the sulfurous yolk. The shell and white will cook up longer using the water in the white for making steam - used in the separation of the 3 parts whites - skin - and shell ... that much easier to pull apart. Its sheer logic.

      If you use the plastic tube of a garlic skin separator - the same can be used for rolling and cracking a hard-boiled egg and taking off the shell. The same albeit smaller quail egg can also be rolled in the tube - and then deshelled with ease. I suspect that this is the inside machine process of this quail egg desheller.

    Kevin my mother made a similar refrigerator pickle. My wife and I eat these every summer. But she also added sliced onions, strips of bell peppers and celery seeds.

    Hi, Kevin! I've been making your spicy pickled quail eggs for nearly a year now. I purchased the hand crank version of the egg peeler, and you're right, it saves me lots of time. I love it. I didn't know the tip regarding stirring the eggs as they boil. I'm definitely going to try that with my next batch. Loved the beef jerky recipe and the sweet & sour cukes too. Thanks for sharing!

    Good luck doing keto. I have lost 85 pounds over time doing keto and intermittent fasting (No food or liquid except water after 5pm to 9am). It enabled me to eat anything except tons of carbs and white foods except cauliflower. I had to do it to bring down my A1C down, I have diabetes.

    My son makes pickled eggs. When he finishes a jar of dill pickles he saves the juice in the jar. When I boil eggs he will take 3 or 4 and drop them in the pickle jar. After a week he has pickled eggs.

      I Use the dill pickle juice for leg cramps! Stops within a min or 2.

    I make some pickles similar to those but it's a big batch. (7 cucumbers, 2 cups onions, 1 sweet pepper) But since dill turns my stomach, they are made with celery seed. If you want, they can be frozen.
    I would like to try the quail eggs, but there again, something other than dill. I use to have a thing that made jerky like that, I think it was called a jerky shooter. Good stuff.

    Love the KETO snack food ideas. Thanx. Always had issues with what to snack/ eat affordable on a keto diet . I think I am going to try it again.

    THANK YOU KEVIN ! I love jerky and since I have to control salt and am gluten intolerant I can use your recipe and be able to enjoy jerky again ! I lost my source for quail eggs but sure did love them just hard boiled as a snack. Bread and Butter pickles are one of my favorites as well.       Have a blue bowel like that. Love them wish I had every color. Had a oblong beautiful oval casserole dish I loved, taken to church one tight without name never got it back. Hope someone is enjoying it as much as í did

    Here in the Hoosier State, we don't call them refrigerator pickles, we call them vinegar & sugar cucumbers. Lol
    I love them, my hubby hates them.
    I also add onions & gutted tomatoes.

    A week ago I opened a jar of sandwich dill pickles I had made 2 summers ago. They were amazeballs! Crunching into those pickles was like heaven after working in the yard.
    The recipe had garlic, whole cayenne pepper, mustard seed, and dill. It was from my first year of pickling, but these were THE best dill pickles I ever ate. Normally I like the sweeter pickles and relish, but I'm converting when they taste THIS good. I am so glad I learned how to can my own home grown food!
    Never had a pickled egg... not sure I'm ready, but that machine is wonderful.
