Grilled Bone-In Pork Chops
It's hard to beat a good grilled pork chop. It is definitely one of our favorites and this recipe packs a ton of flavor in to a relatively simple pork chop.
*WHAT YOU NEED*
-Bone-In Pork Chops
-Your Favorite BBQ Rub (Hopefully Mississippi Grind)
-Couple of sticks of Salted Butter
We were lucky enough to find some great Bone-In Pork Chops at our local Butcher. They didn't need any trimming and had a perfect strip of fat around the loin.
For seasoning, we put a medium to heavy coat of "Mississippi Grind" on each side and all of the edges. You want to let the rub start to sweat and really work the flavors on these pork chops.
While the seasoning is doing its magic, we are going to get the PK Classic fired up. We started with a full chimney of Royal Oak Lump Charcoal. It's going to take about 25 minutes to get the coals where you want it. Once they get good and hot we dumped the coal in the PK. We like to add a little unlit coal just to keep the temps rolling with no trouble.
You can see in the video we did not use the original cooking grates under the Grill Grates. We used two pieces of angle Iron cut to 18" in order to hold the Grill Grates in place. This is an easy hack that hold the grates tight enough and they don't move around too much.
Once the Grill Grates get up to temp, it's time to put the Chops on. While doing so, we took a small cast iron skillet with 2 sticks of butter and placed to the side of the grill grates. This will start melting the butter for the Brown butter sauce at the end.
The Pork Chops cook pretty quick for a total cook time of about 8 minutes. Once the chops were done we placed them in a pre-heated or fairly warm cast iron skillet. This allows the chops to rest but keeps them plenty warm for later.
Now that the chops are out of the way, we can focus on the brown butter. We moved the butter to the hot side of the grill to finish it out. Since it is in a cast iron skillet, the brown butter is going to continue to cook even after its off the heat, so remove it from the heat a little sooner that usual.
Now its time to enjoy these awesome chops! Pour that hot brown butter over the chops and enjoy!
The brown butter will add a great flavor to this pork and works well with any side dish you may have. Add a couple tablespoons to Mac and Cheese or Mashed potatoes to really step up the side dish game!

Bad ass video. Hey can you tell me how’s you rigged up those grill grates with angle iron.
The angle iron catches the factory ledge and they hold their self in place. Nothing fancy. Just a piece of 1/2” angle cut to length.
How did you attach the grates angle.
Simon Guerrero they aren’t. They just sit on top of the angle. It’s super simple. I planned on attaching but never did. It works great with having too.
Ok cool. In the video it looks like they are attached. I like that idea. Keeps them from sliding. I just got a set and tied them with baling wire to the cooking grill. Your idea would be better

It is just salted brown butter. You always could add herbs or something like that.

Grill grates are just sitting on two pieces of 3/4” angle iron cut to length. We jus let use white cotton glove for liners.
