A friendly reminder to my fellow American viewers: John is using Spanish chorizo which appears to be fully cooked. What we have in the US is Mexican chorizo which tends to be raw. There's a pretty big difference between the two so I'd recommend taking a look for Spanish chorizo rather than substituting with Mexican chorizo. 😃 Edit: I've learned that Spanish chorizo is either smoked or cured. These look great! Next big cook day, they're on the list. I do most of my cooking ahead of time and freeze stuff, then pop them in the air fryer, and boom... no huge mess in the kitchen. BTW... I an't thank you enough for the hot water pastry crust! No matter what recipe I tried for pie crust over the years, it always came out like you could block and level a trailer with it. I use this recipe for everything now, from meat pies, to fruit pies, to hand pies. Love it!

It's interesting how different countries make savory pies like meat pies. In the US, we generally only make meat pies while camping using pie irons. While in the UK, its not unusual to find these in restaurants/shops/homes in everyday meals.
Not just in the UK, but also 'down under' in Australia and New Zealand too. And with all of them, there are many many different combinations and fillings that match really well! Like bacon and salmon, and venison and cranberry! There's even a small town in New Zealand where the main tourist attraction is literally the pie shop! Lines out the door!

Just made these. Haven't tasted a pie quite like this since the 90s, particularly the pastry, which is to say, it is fantastic. Admittedly I replaced the mushrooms with leeks (they're my one food hatred) but I am stuffed, they are so filling.

Interesting, the chorizo you generally come across in the States is Mexican, not Spanish, and is generally fresh, not cured, so you removed it from the casing like a roll of breakfast sausage and cook it into crumbles. I bet it's pretty good cured, too. Those pies look amazing!

I made these tonight and my husband who used to eat meat pies in Australia, and was just talking the other day about how he used to love them, said these were better than what he used to get there. He especially liked the crust and how filling these are! This is the first time I have made this kind of crust and it was really easy and turned out good! Wow! I normally watch your videos for classic Northern English recipes, but this sounds awesome. I'll definitely be giving this one a go, probably using thigh rather than breast for extra chicken flavor. (I find breast to be a bit bland if combining with other flavors - Just me) Oh, have you ever tried using duck fat in your hot water pastry? I did because i simply didn't have enough lard. Seemed very tasty and would be nice with any poultry filling I think.

Try Venison and wild boar pie, the gravy is so rich it'll knock your socks off. I used to make it in Germany when I was stationed there, the meat was already mixed from a local freezer supermarket.

Just made these. Haven't tasted a pie quite like this since the 90s, particularly the pastry, which is to say, it is fantastic. Admittedly I replaced the mushrooms with leeks (they're my one food hatred) but I am stuffed, they are so filling.

Interesting, the chorizo you generally come across in the States is Mexican, not Spanish, and is generally fresh, not cured, so you removed it from the casing like a roll of breakfast sausage and cook it into crumbles. I bet it's pretty good cured, too. Those pies look amazing!
Look for Goya Chorizos, they are special for this recipe. You don't need to remove the casing just ready to roll.

The crust is different than the one my grandma taught me. Hers is made with lard, but the lard is cold from the fridge. I will give your way a try. So glad I discovered your channel. Thanks for sharing.

I made these tonight and my husband who used to eat meat pies in Australia, and was just talking the other day about how he used to love them, said these were better than what he used to get there. He especially liked the crust and how filling these are! This is the first time I have made this kind of crust and it was really easy and turned out good! Can't wait to try the other meat pie recipes you have! We are having company tonight so there will be none leftover, but I was wondering if these freeze well and if so what is the best way to freeze them? Thanks!

Try Venison and wild boar pie, the gravy is so rich it'll knock your socks off. I used to make it in Germany when I was stationed there, the meat was already mixed from a local freezer supermarket.
