I've got a vacuum chamber idea for you guys: store bought ice cream. It's always whipped with air, and it seems to me that there's been an increasing amount of air whipped into the ice cream, so you're buying the same volume but you're getting less. I propose buying various brands of ice cream, taking the lid off, and vacuuming them, still frozen, and see how far it collapses with the air removed. Find out how much ice cream we're REALLY getting!

I thought it'd be cool you'd freeze dry Christmas leftovers like cranberry sauce, turkey, mashed sweet potato with marshmallows, ham, etc. Also-go through the supermarket isle and get those on sale holiday items.
Also..how about freeze drying butterfinger? it has a caramel filling which might change in the freeze dryer.

The caramel basically became what's called honeycomb, which is caramel with soda bicarbonate added to cause it to foam and create tons of microbubbles in the caramel. It has been used for decades. It's a lot quicker, cheaper and easier to do it that way than you know.. buying a freeze drier. If you want to try honeycomb candy there are plenty of recipes online and its super easy with only a few staple ingredients involved.
Actually it isn't caramel it's just plain sugar 😄

For the fudge, I'm wondering... fudge covered fudge? Crunchy fudge in the middle, soft exterior wrapped around? Or, maybe somehow make a hollow shell/cup of freeze-dried fudge, with a fudge filling. Different flavors for contrast, or maybe nougat filling.. idk

I've never seen store bought fudge before, it looks like it has an interesting texture. We've only had the tradition of making our own fudge and it has actually very basic ingredients but it's made perfect everytime. I wonder what would happen if you used handmade things inside the freeze dryer instead of everything that's from the store. It would be fun for you two to make, enjoy, and then (possibly) destroy or create a new textured version!
Have they freeze dried the strawberry candies with the jelly in the middle

For caramel, try the caramel apple sheets you buy at the store. If you cut them into strips, maybe it’ll thicken up into bars, like candy bars!

Idea, freeze dried candies that puff like the skittles and the caramel, ground up and then put through the cotton candy machine. Also loved the video, cannot wait for more.
For the caramel, the reaction might depend on whether it was made with butter or milk/cream, maybe the one's made with milk/cream have more moisture than the ones made with butter?

I think freeze dried honey wont change much because its only 17% water
Fun fact, honey never goes bad because there isn't enough water in it for bacteria, the sugar pulls out any water that may be in bacteria
can you try freeze drying a whole onion and test it out if you still would cry if you cut into it?
try freeze drying seeds, then see if they will grow when re-hydrated

The Reese's Trees are covered with milk chocolate the York Peppermint stars are covered with dark chocolate. Maybe that has something to do with the different reactions in the chocolate.

What might happen if you were to combine the (melted) caramel with other ingredients, cooled and freeze dried?
You guys should try to freeze dry cucumbers and also pickles and then try to make pickles in the freezer dryer by having cucumbers in pickle juice
Dark chocolate has a different melting point, as opposed by milk chocolate. When dairy isn't involved, the results will be different.
If u put dry ice in water it will make the water bubbly like soda (u can drink it but don't drink the ice)

The problem is with the CO2 is the plants use to make oxygen through the process of photosynthesis, anyone who ignores that fact is either self absorbed or not thinking rationally about this.

What I think happened with the candy canes is that the coloring they used to make the red lines and the candycane is water-based so it expanded and caused the outside to become crunchy

What happens if you freeze dry things that aren’t food
how about a simple syrup-like stuff? mix lots of sugar into water (i think simple syrup is something like a 2:1 ratio of sugar to water. the water might evaporate and leave some weird shapes from the sugar that should still be on the container.
In my local area (Erie PA) we have a candy called "Sponge Candy" which is basically aerated caramel covered in chocolate. Ours is made by adding baking soda and a little bit of vinegar to the still boiling caramel and then letting it rapidly cool (don't worry.. you don't taste the vinegar at all) but I bet what you have after freeze drying is remarkably similar.
So kinda like honeycomb candy
