I have the same setup, I would say the addition of WDT and a puck screen has made rhe biggest differences in shot quality for me.

What is the difference between a flat white and a latte? New to this and learning to make different coffees.

Flat white is just steamed milk.
Latte will be layered of steamed milk and milk foam (like a cappuccino). In practice and out in the wild, if you ordered both from a barista, you would probably get the same drink.

Doesn’t your espresso die if you made it first before steaming milk

The beans actually stick inside the grinder and get stuck without the water. If you put in 18g without water you may only get back 17.6. With water it’s much closer to 18

@noahsterncoffee yeah plus it takes literally 3 seconds and costs a fraction of a penny to prepare lol so might as well even if its just 0.3g-0.4g extra

Making coffee this way needs only a little more effort for 10x better taste. If you value your extra 1 minute a day that much then you do you. Also he’s using bellows so that he doesn’t have to spend a thousand dollars on a grinder that has less retention.
