Holy cow, this is amazing and perfect for winter. If you want to be fancy schmancy....serve in bread soup bowls.

I do love to use ratios of canned milk & cream or half and half for taste and texture of course its easy to use even just a little too much canned milk taste wise I like to use macaroni that holds in plenty of sauce Also, love to use varieties of cheese that combine grainy with smooth as well as the flavor profiles and velveeta and white cheese work very well. If I use gouda or other you only need A LITTLE for good effect there. And, then the real gritty texture of dried cheese Ppl who use too much butter will kind of ruin the sauce and its taste effect

Thank you for explaining that you need to stir. I thought not lifting the lid was for all recipes. I tried someone else's recipe, twice, that said cook it on high for two hours and not touch it and it came out a burnt mess. I kept thinking I was doing something wrong.

Come to think of it, I only used around 24 oz of cheese, but I did make sure to stir it thoroughly every 30 minutes or so.

That's fine with the milk, it will make it a richer flavor, the chicken broth keeps it a lighter flavor.
