There is no issue at all to sit on the bike. Its just Ducati "legal" protection so you don't sue them if you do something stupid. The only rule to follow is...do not sit on the bike while someone else would be putting the bike on or off the stand, always put the bike first, and only after sit on it.

(Well at least in Belgium) Now the Ducati store told me they are made by the lift manufacturer "LV8" (elevate). It's an italian brand. Which is the official distributor for bike lifts to be used for the Ducati technicians in some stores in Belgium. So they must be good. At the store they use all these Ducati stands and are very good quality. Greetings.
I have a BMW R9t and I was able to just get the pin from pitbull for the PP and it works great! Even the Ducati people told me to go with the pitbull. I do like the red color of the duc stands but you could always Powdercoat the pit bullls. I do need the front stand for both the R9t and the PP. I think pitbull is a sturdy design and great stands, but I like how the red Ducati stands match the bike. The good thing about the rear pitbull stand is that you could get the other pin to work on the sprocket if you need to change it.

The SSSA Ducati stands are actually the best value for money. They are really well made and they do the job. The front and the DSSA ones are... meh. Anyway, it's not a good idea to sit on your bike while on stands (any kind of stand), and there is absolutely no scenario where I see the need to do that. Use a wheel chock if you want to stand on your bike to adjust it or practice.
That rear stand looks identical to the Bike LIft version which I believe is rated to 400kgs which should more than cover someone sitting on it. Maybe they are just covering themselves.
😆 Duke stand good for light duty home mtce - did you see how much the rear SS stand flexed when the PP was lifted? That is what they all do.....maybe not the Pitbull as it has stronger metal. This is why both are tagged 'no rider'. So the RED stands are not for robust work, just home mtce/cleaning. For my V4SMS I use the bikes center stand ( now with modded pins and circlips) and place two pieces of 4x2 under the crash bar cross strut - one either side..... I know, a big spender on stands, 🥴😇😆😉.... but it works well for heavy duty jobs like forks & wheels off, and I can sit on it (when the wheels are back on....I'm not totally crazy) 👍.... Sorry, can't attach a pic here 🤔.....but your Ducati crash bars can be useful as a track lift tool.....😉

I wouldn’t worry about not sitting on your bike on those Ducati lifestyle stands. It’s just a warning so endemic of US culture to sue the shit out of not obeying warnings. If they are rated for bikes, then you’d have to be a super fat bastard to break them, plastic joins or not. Why don’t you try it out & see if you fall on your backside 😉 I’d bet the bike will fall on its tyres, not in your tool box 🤙
I have the rear Pitbull & it's sturdy & secure. Availability for the front is limited though. Worth the wait if you can find it.

Your over thinking the sticker. I own pittbull. Lucky for me the 2016 pikes Peak stands work with the 2023 pikes Peak.

I got the exact same stand, which pins do I use with the Ducati 1199 Panigale??
My stand from Ducati came with the pin specifically for it. I did not have to swap it out. Many of them are the exact same size.

Instructions for my pitbull stand say: "Do nog sit oj the motorcycle while fhe kotorcycle is supported by the stand."
Pierobon stands are probably the most robust on the market imo. Just be prepared to sit down before you see how much they cost.
