This is the reason why there are no age statement (NAS) bottles. It's good that major labels have released NAS bottles that can be arguably better than their flagship 12 year or what not

What's going on with "artificial" maturing...I was at Buffalo Trace a few years ago and they were building a building where they were going to control the temperature fluctuations. Is anyone doing that? Are there any on the market yet?

Hey Shaun, thanks for the comment. Great question, however it's not legal to force the temperature in Ireland or Scotland. You're allowed to manage the temperature to what the regions average temperature is, for example if Scotland's average temp is 12 degrees, you can hold the warehouse at that year round, but you cannot vary the temps or make it hotter to mimic the seasons and make the whiskey age quicker like you can do in America. Age statement needs to be taken with a grain of salt, as you can fast track a whiskey in the US and its summers are far hotter anyway, so a 5 year old bourbon could be very oaky and 95% influenced by the wood, whereas in Ireland or Scotland its very hard to do this. You can disgorge the whiskey into different barrels every year or so to get the best from the different woods, but its very expensive.

So basically if you buy a 12 year whiskey it means nothing as you dont know what size barrel it was matured in, if the barrel was a virgin or 1st fill ect, if the barrel was top of the warehouse or bottom...so why buy a 12 year whiskey? Could be getting shite
