Just found your channel. Great work. I have always remembered what an old army cook told me. Never crack a lot of eggs into a big bowl. Always crack them into a smaller bowl and then dump the smaller bowl into the larger bowl. That way if you crack open a bad egg, it only gets cracked into the small bowl with a few eggs and not into the large bowl with a lot of eggs.
What Jews do is only crack 1 egg into that prep bowl and then after checking it for badness, pour it into the big bowl. This way you waste only that 1 egg that was a goner anyway.
Yes, great tip. I also leaned this in the army where on the field we would sometimes have a ratio of 80% good eggs to 20% bloody (yuck), rotten (yuck) or fertilized (double yuck) eggs.

When I was traveling a lot for work and staying in hotels, I'd take baggies of dehydrated eggs and dehydrated or freeze-dried veggies, cheese, and meat and have omelets ready to microwave in-room or cook in the mini electric skillet I carried with me.
I travel a lot and forced to eat in restaurants. The food in restaurants so bad lately. I think they’re using a lot of cheap cheap seed oils and because theyre so cheap they use more of it.
At the bakery we mix pails of eggs every day, cracking them into a large bowl and then scrambling then with a hand held electric mixer. Then just pour thru a mesh gravy strainer and any shells are gone
The reason you dry at 145°F is so the rehydrated eggs can be used in baking. If your dehydrator only has 165°F temp setting, you can still use them but not for baking.
Why would the eggs bot be good for baking at a temp other than 145? I am just learning about dehydrating eggs. Would love to have a freeze dryer but out of my price point. So dehydrating it is.

@@Rizik1986typically it takes 10 to 12 hours at 125, for mine. I do everything at 125, except meats. Then it's 160 at least, to kill any bacteria with the meats. Correct about lower temps, they just take longer.

Your eggs will remain for up to four months unrefrigerated if you don't wash them until you're ready to use them. Store bought eggs go bad quickly even with refrigeration because they are washed before packing and shipping. You cannot stop the slow spoilage once they are washed.
Maybe someone has mentioned this, but flax or chia seed is a good egg substitute for recipes. You also grind it up. One tablespoon flax or chia + three tablespoons warm water = one egg. It's slimy like an egg and binds whatever you're baking, just like an egg.
I have a round dehydrator and I bought the round silicone trays to set on top of the plastic trays. And, YES, pouring the egg mixture into the tray while it's on the dehydrator is MUCH neater! :)
@@deemayfield - They are called Fruit Leather trays - I've got some for my old round machine and I've used them for eggs. Google them - just make sure you buy the ones with the center hole the same as your machine because there are at least two different types out there.
Please tell me where or what store to find the round silicone trays? I have never seen anything especially when my dehydrator has to have the holes in the center for the dehydrator to fit down inside of it

I use powdered eggs when I am breading anything for oil/air frying. It's a bit thinner and easier to work with, plus it seems to encapsulate better than fresh eggs, leading to juicier finished product. I will definitely start making my own after seeing this video. Thank you so much.
Wife has been taking our extra eggs to work and letting her people there donate to the chicken feed. We don't have a huge flock maybe a dozen but it keeps us in free eggs so to speak. I bought one of those portable sealing machines for $16 and use it to seal anything dry. it sucks out ALL of the air. put an oxygen absorber in it and I usually add a bay leaf too. it just charges up. you press it down on the mason jar flat topper. perfectly sealed in 15 to 30 seconds. also perfectly safe. just recommended for dry food tho. no moisture, liquids, etc and this does not replace pressure cooker canning. but this is the very best way I have ever found for sealing dry items in mason jars. been canning for almost 60 years.
How do you seal the dehydrated eggs in the glass jars? Can I use a vacuum sealer (I purchased one recently to vacuum seal fresh pine needle tea bags for long term storage in the freezer:-)

Thank you! I've been wanting to do this, I always water glass at least 25 dozen for winter. The problem with water glassing is they need to be at a cool temp, or they go bad. So, I always wait until the temps get cool to do it, but our AC went out late Spring, early Summer, and I forgot to put them in the fridge. Thank the Lord, I only had a couple dozen go bad. Hated that, but at least we had eaten around 20 dozen of them. I want to dehydrate them for Spring and Summer. So, thank you for the info on how to do that, I knew you could just hadn't seen it actually done. We're planning on getting our coops built next Spring, but thankfully we live in the middle of a huge Amish community, plus many people in our area raise layers and meat birds. My daughter and I just bought 25 dozen and I can buy 17 more dozen for $34 and dehydrate them, yea!
When I started food prepping at 65 yrs old I did dehydrate eggs, tested them (mom and husband approved) BUT THEN…saw negative comments of how that was unsafe so I tossed out the dried eggs😩 BUT after a few years I have seen, read and heard that it is safe following the guidelines you describe so back to drying them. I bought a freeze dryer and have done the eggs but with the all the issues with the FD I haven’t and probably won’t be using it anymore. What I dropped by to say is that you are the FIRST of so many YT’ers that I’ve seen dehydrating eggs in the using of alternate containers and it’s GENIUS! Thank you!😊😊
You are right it is not safe as salmonella can set up from the time they are liquid to the point where they are dry. I am not sure I would risk my family's health. Cook them first and then dehydrate works well and is safe.
@@charlesmckinley29 It has given many error messages since I purchased it. I was sent another pump after a few months with it. The last message as I recall was a vacuum error. My husband bought the pipe to change it (there was a youtube video how to do so) but he never did and it was beginning to get too hot (Last Vegas) it never got done. Thankfully, I was able to freeze dry the things that mattered to me the most so I believe the FD paid for itself with what I got. I’m no longer interested in this expensive toy so I’ll probably try to sell it later this year.

I recently discovered ( THE FOREVER DOG ) Great Book ! you can wash the shells dehydrate them and make fine powder .Great glucosamine, chondroitin ,collagen to reduce joint pain by 72.5 % on your fury friends ! Thank you! I have 38 chickens and way more eggs than the 2 of us can eat. I do have a suggestion though.....I prefer to not use the silica bags so I vacuum seal everything I can. The moisture stays out and no risk of something happening to the silica bags. But again thank you for the information 💚

Love these videos on stockpiling your extra produce/ eggs/ meat etc :) Tip for both you and other viewers, it isn't hard to break 2 eggs at once (in one hand), after a little practice.. that is standard practice in most restaurants (where it's common to break hundreds of eggs a day), and it will make this process go MUCH quicker! might be better to use the edge of a cast iron skillet/ something with a sharper edge, rather than the mixing bowl...
I happen to be a carnivore and eat a lot of eggs. I wish I knew about this when I had chickens and gave away lots of eggs. With the political situation the way it is I want to be safe not sorry. This s a great video and you made it look extremely easy to follow. I have hundreds of jars from pressure caning I may as well fill them and be useful. I want to make many different dry powders. could not afford the Official Freeze Drier. but oh, have use a dehydrator for years and have a freezer.....I did it without any directions but my own fresh eggs, freezer and dehydrator. then I found directions for rehydrating! great to have on hand!

I want to say Thank you. I wondered how one did this. But never seen a one do it. Normaly ive just kept eggs out of the sun. And depend on the type. They keep. The worse. White store eggs keep 6 to 9 months. brown stote bought 9 months to 12 months. Unwashed white eggs up to 12 months. Unwashed brown/ green/ blue eggs 18 months. Now there are a few ways people have. But they still come out to the amount of a unwashed egg. However. If the get above 100 degrees a few times they may turn bad. No eggs do not meed fridge. That is an American thing. And the cold reduces thier keep time. Another thing is. You can freeze eggs. As long as they are not unfrozen they will remsin good. But im wanting to try this in my dehydrator. Once in summer and once in winter. Most the time winter is best for me. ...lol my dehydration unit is a rack i made thats outside . I have extreme low humidity. And know it will need to be shaded ( sun is not the key. Its the wind and low humidity.) You might think summer is better. But really winter is better. 60 degrees and winds has dried out many things for me. Oh thats right i eantyto see that fruit leather video. Fruit roll ups maybe?
I have to keep my eggs on the floor in my kitchen because no room in fridge, freezer, wildlife, only me to eat them. Dogs or chickens get them get them after a couple of months. I don't wash them, low humidity, but it can get to over 80⁰ in the house, over 100⁰ outside. They end up dehydrating, giant air pocket, anywhere from a 5th to 3rd of shell. Yokes seem ok, dogs won't eat but they can be picky. Chickens love them. Breaks my heart "to waste" them, so now will dehydrate as soon as I buy solid trays. But, I don't know how yours keep so long & well. :/

Question I noticed that they are sealed in mason jars and looks vacuumed. Did you do another step to sanitize and seal those jars? New to canning Thank you
I was able to buy silicone swiss roll pans that fit into my dehydrator. I have also used silicone hamburger bun pans cut into individual rolls parts to dehydrate a few extra egg whites, one per each. They have a nice lip and don't spill. I end up eating a fair amount of egg yolks added to sauce or in homemade mayonnaise, and the egg white powder is useful in recipes. I can't eat commercial eggs because I get an inflammatory reaction, but pasture raised eggs work great for me. You can add powdered eggs (and powdered vegetables like onions, garlic, celery, etc) directly to your meat loaf mix. It will absorb the meat juices as the meat cooks. Mostly just the fat will run off.
I have a Nesco Snackmaster (round) dehydrator. I recently purchased the dehydrator and also got 4 round silicon rings to fit into the dehydrator so I can just pour the egg mixture onto. So it is really no different using a different brand of dehydrator than what she showed. The Nesco has a 145 degree mark on the dial. I've been doing peaches with it so far on the plastic round baskets. I plan on trying eggs once I get done with all my peaches and I'll lay the silicon rings on the plastic rounds then pour in my egg mixture. I purchased 4 round silicon rings that fit into the 13" Nesco rings ($22 for the 4). The brand is "Bright Kitchen". Hope that helps.
Yup, this is exactly how I dehydrate my whole fresh eggs. I add one more step before putting it in my jars. When I have it powdered down in my Magic Bullet, I put it back in the dehydrator for a couple of hours, then jar & vacuum seal. I want to make absolutely certain that there’s no moisture left. Do you think that’s overdoing it? 🐣🥚
I SO wish I had my own chickens because I just priced Walmart eggs. A box of 60 is back up to $18.28 here in Clarksville TN. It would cost me nearly $100 to make 200 dehydrated eggs! Boy if THAT isn't an eye opener on inflation (and the alleged bird flu culling of course) I don't know what is! I envy homesteaders and those who can grown their own!

Go for 140 degrees. What you are doing is dehydrating without cooking the eggs.

Wife has been taking our extra eggs to work and letting her people there donate to the chicken feed. We don't have a huge flock maybe a dozen but it keeps us in free eggs so to speak. I have a Bass Fisherman dehydrator but have not used it in years; I may have to now. Have watched your channel for years. So keep up the good work.

Out of curiosity, why not use much smaller mason jars? I'm thinking you have to use them up pretty quickly once the jar is opened (I'm amazed how many eggs you dried!!)

I bought one of those portable sealing machines for $16 and use it to seal anything dry. it sucks out ALL of the air. put an oxygen absorber in it and I usually add a bay leaf too. it just charges up. you press it down on the mason jar flat topper. perfectly sealed in 15 to 30 seconds. also perfectly safe. just recommended for dry food tho. no moisture, liquids, etc and this does not replace pressure cooker canning. but this is the very best way I have ever found for sealing dry items in mason jars. been canning for almost 60 years.
How do you seal the dehydrated eggs in the glass jars? Can I use a vacuum sealer (I purchased one recently to vacuum seal fresh pine needle tea bags for long term storage in the freezer:-)
We scramble our eggs, then dehydrate. Maybe easier to handle

Thank you! I've been wanting to do this, I always water glass at least 25 dozen for winter. The problem with water glassing is they need to be at a cool temp, or they go bad. So, I always wait until the temps get cool to do it, but our AC went out late Spring, early Summer, and I forgot to put them in the fridge. Thank the Lord, I only had a couple dozen go bad. Hated that, but at least we had eaten around 20 dozen of them. I want to dehydrate them for Spring and Summer. So, thank you for the info on how to do that, I knew you could just hadn't seen it actually done. We're planning on getting our coops built next Spring, but thankfully we live in the middle of a huge Amish community, plus many people in our area raise layers and meat birds. My daughter and I just bought 25 dozen and I can buy 17 more dozen for $34 and dehydrate them, yea!
When I started food prepping at 65 yrs old I did dehydrate eggs, tested them (mom and husband approved) BUT THEN…saw negative comments of how that was unsafe so I tossed out the dried eggs😩 BUT after a few years I have seen, read and heard that it is safe following the guidelines you describe so back to drying them. I bought a freeze dryer and have done the eggs but with the all the issues with the FD I haven’t and probably won’t be using it anymore. What I dropped by to say is that you are the FIRST of so many YT’ers that I’ve seen dehydrating eggs in the using of alternate containers and it’s GENIUS! Thank you!😊😊
You are right it is not safe as salmonella can set up from the time they are liquid to the point where they are dry. I am not sure I would risk my family's health. Cook them first and then dehydrate works well and is safe.

@@charlesmckinley29 It has given many error messages since I purchased it. I was sent another pump after a few months with it. The last message as I recall was a vacuum error. My husband bought the pipe to change it (there was a youtube video how to do so) but he never did and it was beginning to get too hot (Last Vegas) it never got done. Thankfully, I was able to freeze dry the things that mattered to me the most so I believe the FD paid for itself with what I got. I’m no longer interested in this expensive toy so I’ll probably try to sell it later this year.

Thank you! I have 38 chickens and way more eggs than the 2 of us can eat. I do have a suggestion though.....I prefer to not use the silica bags so I vacuum seal everything I can. The moisture stays out and no risk of something happening to the silica bags. But again thank you for the information 💚

Tip for both you and other viewers, it isn't hard to break 2 eggs at once (in one hand), after a little practice.. that is standard practice in most restaurants (where it's common to break hundreds of eggs a day), and it will make this process go MUCH quicker! might be better to use the edge of a cast iron skillet/ something with a sharper edge, rather than the mixing bowl...
I happen to be a carnivore and eat a lot of eggs. I wish I knew about this when I had chickens and gave away lots of eggs. With the political situation the way it is I want to be safe not sorry. This s a great video and you made it look extremely easy to follow. I have hundreds of jars from pressure caning I may as well fill them and be useful. I want to make many different dry powders. I wonder if you do others I will look. Thank you.

could not afford the Official Freeze Drier. but oh, have use a dehydrator for years and have a freezer.....I did it without any directions but my own fresh eggs, freezer and dehydrator. then I found directions for rehydrating! great to have on hand!

I wondered how one did this.
But never seen a one do it.
Normaly ive just kept eggs out of the sun.
And depend on the type. They keep.
The worse. White store eggs keep 6 to 9 months.
brown stote bought 9 months to 12 months.
Unwashed white eggs up to 12 months.
Unwashed brown/ green/ blue eggs 18 months.
Now there are a few ways people have. But they still come out to the amount of a unwashed egg.
However. If the get above 100 degrees a few times they may turn bad.
No eggs do not meed fridge. That is an American thing.
And the cold reduces thier keep time.
Another thing is. You can freeze eggs. As long as they are not unfrozen they will remsin good.
But im wanting to try this in my dehydrator.
Once in summer and once in winter.
Most the time winter is best for me.
...lol my dehydration unit is a rack i made thats outside .
I have extreme low humidity.
And know it will need to be shaded ( sun is not the key. Its the wind and low humidity.)
You might think summer is better.
But really winter is better. 60 degrees and winds has dried out many things for me.

I have to keep my eggs on the floor in my kitchen because no room in fridge, freezer, wildlife, only me to eat them. Dogs or chickens get them get them after a couple of months. I don't wash them, low humidity, but it can get to over 80⁰ in the house, over 100⁰ outside. They end up dehydrating, giant air pocket, anywhere from a 5th to 3rd of shell. Yokes seem ok, dogs won't eat but they can be picky. Chickens love them. Breaks my heart "to waste" them, so now will dehydrate as soon as I buy solid trays. But, I don't know how yours keep so long & well. :/

I was able to buy silicone swiss roll pans that fit into my dehydrator. I have also used silicone hamburger bun pans cut into individual rolls parts to dehydrate a few extra egg whites, one per each. They have a nice lip and don't spill. I end up eating a fair amount of egg yolks added to sauce or in homemade mayonnaise, and the egg white powder is useful in recipes. I can't eat commercial eggs because I get an inflammatory reaction, but pasture raised eggs work great for me.
You can add powdered eggs (and powdered vegetables like onions, garlic, celery, etc) directly to your meat loaf mix. It will absorb the meat juices as the meat cooks. Mostly just the fat will run off.

I have a Nesco Snackmaster (round) dehydrator. I recently purchased the dehydrator and also got 4 round silicon rings to fit into the dehydrator so I can just pour the egg mixture onto. So it is really no different using a different brand of dehydrator than what she showed. The Nesco has a 145 degree mark on the dial. I've been doing peaches with it so far on the plastic round baskets. I plan on trying eggs once I get done with all my peaches and I'll lay the silicon rings on the plastic rounds then pour in my egg mixture. I purchased 4 round silicon rings that fit into the 13" Nesco rings ($22 for the 4). The brand is "Bright Kitchen". Hope that helps.
Yup, this is exactly how I dehydrate my whole fresh eggs.
I add one more step before putting it in my jars.
When I have it powdered down in my Magic Bullet, I put it back in the dehydrator for a couple of hours, then jar & vacuum seal. I want to make absolutely certain that there’s no moisture left.

I SO wish I had my own chickens because I just priced Walmart eggs. A box of 60 is back up to $18.28 here in Clarksville TN. It would cost me nearly $100 to make 200 dehydrated eggs! Boy if THAT isn't an eye opener on inflation (and the alleged bird flu culling of course) I don't know what is! I envy homesteaders and those who can grown their own!

Wow you can do this? What about sealing and packaging them so they will keep for a long time? It would seem that they would have to be super airtight to have them stay useable...interesting...I only have a round dehydrator, not a fancy one either. 😊
The round one works fine. To keep it for a very long time you’re gonna need to vacuum seal it into the jars.
I use a round Nesco dehydrator with the silicone inserts on the round trays
