Easy and Refreshing Turkish Cold Yogurt Soup, Ayran Aşı

  • Ayran Aşı (Ayran in Turkish generally refers to salted yogurt drink and "aş" means food) is a traditional cold soup perfect for those scorching summer days. Hailing from the heart of Anatolia, this dish is a celebration of simple, wholesome ingredients coming together in harmony.
    Ayran Aşı boasts a symphony of flavors, blending creamy yogurt with tender cooked whole wheat, fresh herbs, and hearty chickpeas. What makes this version special? Unlike its winter counterpart which is cooked and made with vegetables such as courgette / zucchini, sometimes spinach, this version is simple and served chilled, making it a go-to choice for beating the summer heat.

    Ingredients:
    • 2 cups strained Turkish yogurt, or 3 cups regular yogurt (600 g)
    • 2 tbsp strained sour yogurt (optional)
    • 1 cup cooked chickpeas
    • 1 cup wheat grain, soaked overnight and cooked, 200 g
    • 2 - 3 cups cold water (depending on the desired consistency)
    • 1 clove of garlic, grated
    • Fresh mint leaves, chopped 1/4 cup, 10 - 15 g
    • Fresh dill and / or fresh basil, chopped 1/4 cup, 10 - 15 g
    • 2 tsp salt, or to taste
    Instructions:
    1. Soak the whole wheat overnight and drain
    2. Transfer into a pan, add 2 - 3 cups water or enough to cover and bring to a boil
    3. Cook until the grains are soft and most of the liquid is evaporated and is thickened
    4. Remove from the pan, transfer into a bowl with ½ cup of the cooking water, if any remaining
    5. Let it cool down and set aside
    6. Add the yogurt into a large mixing bowl and whisk while adding the water gradually
    7. Whisk and stir until the mixture is very smooth
    8. Add water until desired consistency is achieved,
    9. Use less water if you want a thick soup or if using regular yogurt instead of strained yogurt
    10. Finely grate or crush the garlic and add into the yogurt mixture
    11. Finely chop fresh mint leaves (1/4 cup chopped) and add into the bowl
    12. Optionally also add chopped fresh dill, basil or any other fresh herbs to your taste
    13. Add salt to taste
    14. Add the cooked wheat together with the cooked chickpeas and mix to combine
    15. Transfer into a pot or cover with a lid and refrigerate until the soup is cold
    16. Enjoy cold during summer as a refreshing soup or at room temp for colder days

      Yes, while it was being prepared, I thought that cucumber would be welcome in the soup. Maybe even finely diced celery would work well in addition to the cucumber.

    Delicious recipe! I love ayran aşı :) In Elazığ where my mom is from, they cook ayran with wheat and cihckpeas which I'm not that fond of :)) And they do not add garlic, but why not, it may add extra flavour :) I am lazy, so I prepare ayran and put boiled orzo and sometimes add boiled chickpeas instead together with fresh mint leaves :)) Ellerinize sağlık!

      Yes, just keep the temperature a bit higher and strain through a cheese cloth.
