Hi! I just put cake in the oven and can’t wait to taste it! Dominican cake is my favorite of all time and that frosting yum! I made a mistake though, I poured out the batter into another pan to whisk the egg whites… but didn’t clean it first so the egg whites just stayed as watery… oops! Hehe, next time :) Thank you dear 😊

Thanks so much for this recipe!! I just made it. Substituted orange juice for Pineapple. It taste delicious. However, not sure why but my cake sunk after removing from oven 45 min. Also if I assemble it night before and leave it out will that be ok?
You are welcome! Are you using 10 inch pans? I normally bake for 30 minutes in a preheated oven. Never stick the pans in a cold oven. Don't open the oven before 30 min. If you open it too early the batter can sink in the middle. Yes you can assemble the night before and wrap well in saran wrap to keep the cake moist.
Once it's decorated, any leftovers can go in the refrigerator. I believe it should be consumed within 2-3 days. You can also wrap with plastic & freeze. The best way is to eat it fresh. I rarely have any left!

Loved your video and the details . I’ve seen several recipes where zest and evaporated milk was used instead of actual fruit juice (orange/lemon): does this fruit juice overpower the cake? I’ve had it before and has no idea fruit juice was used in the batter as I couldn’t taste it
You can't really taste the orange juice. It's not overpowering at all. Maybe because of all the other ingredients, the taste is not citrusy (is this a real word?) at all.
You don’t really talk about the Dominican vanilla that is used for this cake and frosting usually. Everyone I have asked has stressed that with these cakes. And I can always taste the difference. Do you use Dominican vanilla?? If so, what is your insight to the vanillas and how can we get them in the states? Thank you. I can’t wait to try this
You're right. Dominican vanilla is clear (not brown). I always get it when I travel there or when family comes to visit. But I have also used pure vanilla sold here in the USA and while it tastes a bit different it's still delicious. The dominican vanilla brand I used is "Delifruit" and is now sold on Amazon.
Try taking out three tbl of the flour and substitute it with three tbs of corn starch and adding 1/2 tbs rum extract. It gives it a great taste and texture!

I grew up eating these types of cakes but I live in an area where all you find is butter creams or whipped cream frosting etc. They are ok but I loooooove these types of cakes. I need to learn for my mom too. I'm scare of messing up the first time. But once I get my tools I will try. Once again thank you for sharing. I notice you did not mentioned measurements for the tartar, vanilla flavor, unless I missed it. Also is the merigue powder nessesary not sure ill find it around here lol. You are so welcome. I use a teaspoon for the tartar and one teaspoon of vanilla for the meringue frosting. However I have also made it without the tartar. If your egg whites are really cold you don't really need it. I keep mine in the fridge until I whip them. I also make the cake one day & frosting the next day. So it's not too overwhelming. Practice makes perfect.
My cake batter when I divided and weighted it but it came out to 3 lbs each cake pan and I noticed your cake pans they weighted 2 lbs . Hoping it turns out good🤷🏻♀️

Yes you can make a half pound cake into two smaller pans (8 in) and it's delicious.

Yes for the batter it's best at room temperature. For the egg whites for the frosting those can be cold. The colder the egg whites the better.

I don't know about the word "heavy" the cake is moist and airy. It's not like a pound cake.

El jugo es del supermercado y los huevos estaban frios. Para batir las claras es mejor si estan frias.

Yes, good idea. Normally I use parchment paper, but didn't have any when I decided to film the video.
How many people will this feed?
It depends on the slices, smaller sizes can feed 30 people. I like to give bigger slices and serve 20 people.
