Why so many eggs? Twelve eggs are a lot, but so many? Don't get me wrong. I love Dominican cake. They are so delicious. I can eat the whole cake myself.
I just made it and mine came out heavy and very very rich, too rich and greasy. Let me ask; I used extra large eggs and you didn’t specify what size so I’m thinking this has a big impact. 12 extra large eggs is very different than 12 large or even medium eggs. My butter batter curdled half way through the egg addition, and in my experience, it’s bc there is too many eggs for the amount of butter. I added flour to take up some of the curdling. I think it’s important to mention the size of the egg. Did I miss it? You were very precise about everything else but just the egg size. Oh well, my neighbors will enjoy it.

In the video you say you leave the butter beating for 40 minutes. Is this correct?
yes, it beats for 40 to 45 minutes. Cleaning the bowl every 10mins. It needs to be fluffy and almost very pale, like i show u in the video.
Do I need the rum? Can I leave out or substitute?
u can leave it out.

Does the sugar need to be creamy like mayonnaise when it is incorporated with the butter?
those flower nails, michaels, joans, any craft store that has a baking aisle. also walmart. 😘
and yes, just follow the time frames like i showed u. the butter and sugar turn white and creamy similar to mayo.
