The jack stand will fall to the lowest notch unless you lower the weight of the vehicle into it. Very dangerous! Use the jack to raise the vehicle, put jack stand under and then lower the jack until vehicle rests on jack stand. That's the only way to lock it in place.
You should not let the oil level drop lower than the "add" line on the dip stick when the engine is off - ever. Not only does the engine need to have the correct amount of oil for lubrication it needs to have the correct amount to cool the engine. If it leaks or burns oil, check it often enough that it doesn't fall below the add line. This is true for all cars, trucks, motorcycles, lawn mowers etc.
If you take the oil cap off before you drain it drains a lot faster
