This is outstanding. Brilliant examples of classics. Yes I have my objections to some of the recipes like the old fashioned no muddling fruit in mine thanks. But wow this guy knows his craft backwards. Well done and kudos to cargo for having such brilliant staff. Excellent.
Fair point maybe I over hyped them a little. Its just pleasing to see because a lot of bars just can't do this well. They either take their time or ruin the drink because they can't keep up with the pace. A good quality drink and consistancy delivered at break neck speed isn't easy. Any bar staff that can equal or better this demo know their craft well. If you go into a bar and see high quality drinks coming out at this pace give the staff a good tip they deserve it.
i can do 10 cocktails in about 12-15 minutes but men you look so fresh doing 14 cocktails in 17 minutes... so satisfying watching you working great job!!
Free pouring is a skill you're gonna have to learn at some point, but even though I can do it perfectly every time I ALWAYS use a jigger, simply because of the professionality of it. Being a guest at a bar and seeing someone measure with a jigger is awesome, because I know that the recipe is being followed. I always complain when I'm the guest at a higher class place and the bartender does free pouring, since I'm not there for flair but for quality drinks. I had a period where I only did free pouring for the badassery of it, but I realized I'd much rather have quality over quantity.

annnnnnnd for the mojito, here at cargo we are changing the way to make a mojito: add 200 leaves (a handful) of mint...and to top it off, add a plant of mint to garnish it.
I think he is some kind of instructor to the bartenders that work on that ship (did you hear the horn?) , he was on a mission not only to teach the changes they made for some drinks but also showing them how fast they need to do the drinks, after all serve fast and you are the best.
I take it that one glass measure is 15ml, in which case whenever he says '45ml of X' he means only 30ml since he only puts two measures of the glass into the shaker. 15×2=30.
His jigger has 2 sizes. One with 30 ml and one with 15. So for the 45ml he switches the sides, you can see it pretty clearly on the second or third drink.

Good video.. only thing I would suggest is making multiple at once. You had a lot of drinks with a 2.1.1 combo to shake. As well as the Manhattan could have sat for at least two other drinks and then stir to proper dilution.. just my tip for multiple drinks at once!
For the dry wash, shouldn't it have been done inside the cocktail glass as opposed to the tumbler? I can see why you'd poor the vermouth in with the cocktail if you wanted to shake/stir it, but I don't see the point of tossing it while inside the tumbler glass as opposed to doing the bath in the cocktail glass before discarding. I'm sure there's a reason but mostly just curious. Overall, this was pretty awesome to watch. You work quickly, even while explaining.
