I also like to use a couple of drops of vinegar, Chinese cooking wine, and a little chili paste. My Chinese cooking is more like what one would find in Kolkata, but this recipe is totally worth a try!
The West Indian store sells a “Chinese Sauce”. I say it because a lot of Guyanese people use it. It seems like a mix of hoisin, soy sauce and spices. Some brands are sweeter. Sometimes if I don’t have it I will use hoisin, soy sauce, 5 spice and a pinch of sugar or some honey.

I dont know what happened over the past decades, but this is not how Guyanese Fried Rice was made. this is not considered Fried Rice, or even Guyanese Fried Rice. Whether you are on Mars or Guyana, U.S/ Canada/ China 1. take preccoked cold or old rice from day from before 2. Fry vegetable and or meat 3. put in rice and FRY rice well. You have to FRY the rice not boil it. What everyone is making is some sort of very seasoned rice.

You can definitely probably turn this into a Paella by changing up the seasonings and adding fresh seafood at the end

8-10 cups for a long tray of rice
