I first enjoyed Clare's cooking when she was chef patron of restaurant Gordon ramsay. It was clear that she could maintain a 3 Michelin star standard of cooking! It's fantastic to see she has her own restaurant with her own concept now. A very well deserved 3 Michelin stars! I've been putting off going here since she first opened, but must definitely visit soon

I originally worked there as a the Chef De Partie but when we started doing mucous mornay I was promoted to Chef De Mucous after obtaining the certificat d'excellence en crachant sur peple and would finish the dish at the table

Wow this is the first western chef not to overcook fish! Everyone else over cooks seafood. The only negative is that if they were serving sea bass, they should have included the skin. Sea bass skin and fat are tasty.
Can you respect the skill and still hate it? Probably just me - but I find that both the Sea Bass and Lamb Belly quite unappealing. I think in both cases it is the texture that is a turn off.

It’s amazing food but what is hard to swallow is this is very much a class divide - the only people who get to enjoy it are the super rich - your average person doesn’t have 170 quid to blow on a meal for most of their lifetime

Tasting menu is a half dishes (small portions) to let you try the signature dishes, more creative and inventory control is not à la carte menu. Is an opportunity for deeper to know the chefs of season menus and restaurant.
