Wouldnt consider this bbq but I'd make the first two recipes. I've made several of his recipes and what I appreciate most is how simply and directly he communicates the process. "In" "out" "salt" "2 minute and 2 minutes only" etc... every recipe cane out perfectly. Prep is his key.

Ripe fresh chiles are so tasty, but glad you showed people how to get rid of the stony seeds. On the other hand Chile Rellenos and Jalapeno Poppers you use green ones.Don't know if you can get big slightly hot horn pepper, but you do surgery, slit and seed, fill with cheese stuffing ,batter and deep fry for both recipes.Yum.

There's grilling, and there's barbecue. Grilling is when people say, 'We're going to turn up the heat, make it really hot and sear a steak, sear a burger, cook a chicken'. Barbecue is going low and slow. Happy BBQ time! Cheers, Domenico.

In Australia, BBQ is fast cooking on the outdoor BBQ grill. we don’t do low and slow much but when we do it is still bbq. Grilling is what Americans call broiling in the oven.

The steak at the start, in the US the is a strip cut... cut in half by the look of it. In the UK a strip is a sirloin. Much rather have a ribeye either way. If you use the amount of salt he is using, use course salt, not fine. The size of your salt matters.

    1. Use olive oil for frying okay - but heat it up so much that it smokes? I think most Italian chefs would kill you.
    2. The ribs, I got excited when it said take your time. But then I would have expected them to be marinated for 24 hours or more.
    3. And most importantly, none of this had anything to do with BBQ. To me, BBQ means throwing meat - or greens - on a grill.
