Not enough room to do a traditional stair down to the cantina but you can do a circular stair behind the cantina bathroom to come up to the living room.
I want that one, I’ve watched a lot and I like that one the best. I would use the yellow courtyard as the main entrance, but remove the steps in the corner outside and have a little cafe table there. Do what the owner said with the stairs. I’d put the kitchen in the cantina with the bathroom and the lounge upstairs. in the space opposite the old oven I’d put the washing machine where the sink is. I would not use that entrance but have nice glass doors to let the light in. And upstairs a bedroom keeping the rustic ceiling. And if I could fit a bathroom in the bedroom so I don’t have to go downstairs to the toilet in the middle of the night, that would be perfect. And underfloor heating where the old flooring can’t be saved. Perfect little home for 1. One thing I have found very curious watching these videos is how oversized a lot of the furniture is except for the kitchen tables. They are quite small and there is usually more than 1. Is there a reason they don’t just have a bigger one in one designated area? Genuinely curious?
Looking at the thick walls of the structure of the house to the outside stairs there’s no way you could do stairs downstairs inside. I put a small skinny bathroom in the bedroom would work for me.

Si. Circular staircases can be a solution when the space is limited. Also for a tight budget one can save more with a circular staircase
