  • Ingredients
    2 ripe plantains
    3 eddoes/taro
    1 sweet potato
    4 pieces of cassava
    1 freshly squeezed coconut milk (can milk can be used too)
    2 onions finely chopped
    4 heads of green onions finely chopped
    3 mari wirrie peppers finely chopped
    1 tsp salt
    1 tsp black pepper
    1 handful of salted cod fish (optional)
    Few pieces of grey snapper (any fish of your choice can be added)
    Preparation
    In a wide pot
    Add 1 tsp coconut oil
    Add chopped onions and pepper and cook for 2 minutes
    Peel and wash all provisions (plantains, eddoes and sweet potatoes)
    Add all provisions to the pot and mix well
    Add salt and black pepper and mix
    Add thyme
    Add coconut milk and green onions
    Cover and cook on medium heat
    Fish preparation
    Wash and seasoned fish with green seasoning (garlic, green onions,thyme and pepper)
    Add 1/2 tsp salt
    Add 1/2 tsp black pepper
    Slightly dust the fish in flour
    In a pan with hot oil add the fish and cook until golden brown on all sides
    Drain and set aside to add to the dish.
    Dumpling preparation
    In a bowl with 3/4 cup of flour
    Add 1/4 tsp baking powder
    Add 1 tbsp brown sugar
    Add 2 tsp butter
    Mix well and add room temperature water and knead to a firm dough
    Make small pieces and roll to 2 inches long
    Add to the pot of Metem and cook for 5 minutes
    Add fried fish on top and serve
