The Down Fall.... If you put a Heat Sink.... It will make the Circuit bigger. :(((((. It's better to use a step down and limit the current and make circuit smaller for tight spaces.

The transistor is acting like a variable switch, it controls how much current (and voltage) it pass. Think of a water tap you can control how much water will flow by opening or closing slowly the water tap. Get my point ,hope this helps.

This is not a great way of dimming a LED.. You should instead adjust its current rather than voltage. Or you could control it with PWM
You know how much components are involved and complicated to build a PWM variable power supply?. I don't think with just two components!.
